Cold beetroot soup with smoked halibut


Boiled beets 2 small
Beet juice 150 ml
Vegetable broth 200 ml
Cold smoked halibut 100 g
Onion 1 PC.
White wine 50 ml
Fruit vinegar 1 tbsp. l.
Garlic 1-2 teeth
Sour cream 2 tbsp. l.
Lemon juice 1 tbsp. l.
Smoked paprika 1 tsp
Bay leaf, salt, pepper taste
Dill 1-2 twigs
Rast. oil 1-2 tbsp. l.

Cooking method

  • Chop the onion and garlic and fry until transparent in vegetable oil. Pour in white wine, add paprika, spices, bay leaf and warm up a little more.
  • Cold beetroot soup with smoked halibut
  • Remove bay leaves and add coarsely chopped beets, pour in beet juice, broth, vinegar and dill and boil for another ten minutes.
  • Cold beetroot soup with smoked halibut
  • Purée the finished soup using a blender, cool and pour into bowls, add sour cream and either ready-made smoked halibut to each sour cream, or, if you have a Brand smokehouse, smoked with your own hands. Bon Appetit!
