Cooking method

  • Khushaf is a delicious natural energy cocktail made from milk and dates. And although he comes from the Maghreb countries (Morocco, Tunisia, Algeria, Libya), he is loved in almost all Arab countries. After all, the date is an amazing fruit, which in many countries is credited with the properties of strengthening health and prolonging life.
  • The softer your dates, the richer the drink will be in color, taste and smell.
  • Rinse the dates, remove the pit, cut into pieces. Put them in a saucepan, add sugar, vanillin and salt.
  • Add milk and heat to a boil over medium heat. As soon as it boils, reduce the heat to minimum and cook for 5 minutes. The milk will take on the color of baked milk.
  • Cool the drink and keep in the refrigerator for 5-6 hours to infuse properly.
  • Khushaf can be drunk by draining from the thick, or, on the contrary, beaten in a blender along with the thick.
  • The first is pleasant to sip through a straw, the second can be eaten with a spoon.

Note

The drink turns out to be very pleasant to the taste (something from ice cream and from condensed milk at the same time), rich, saturating and invigorating, especially if with ice.
As for sugar. The recipe in all the sources I met is the same. Sugar is indicated everywhere "to taste". Those with a sweet tooth write that they add 4-5 spoons. And I do not advise - I do not advise at all, because it is so very sweet.
By the way, if you think that the drained drink is less sweet than the ground drink, then this is not the case. Dates manage to give all their sweetness to milk.
