Ingredients

Wheat flour 280 g
Rye flour 215 g
Buttermilk 300 ml
Lemon juice 1 tbsp. l.
Salt 1 tsp
Dry yeast 2 tsp
Honey 3 tbsp. l.
Caraway 5 tbsp. l.

Cooking method

  • I added 1 more tbsp. l. malt extract, and, in my opinion, 5 tbsp. there are too many spoons of cumin. I put 1-2.
  • I baked on both basic and whole grains. It worked well both there and there.

I want to share a bread recipe that has become one of my favorites. I recently had a bread maker, less than a month, tried not so many recipes, but this one became my favorite from the first bake.
The original recipe was taken from a Latvian website 🔗
It tastes very close to Riga's sweet and sour bread.

I have found an excellent alternative to buttermilk for myself: milk + lemon juice, mix and let stand for 30 minutes at room temperature, that's it, buttermilk is ready!
P.S. For a glass of milk, I take a tablespoon of lemon juice.

I think buttermilk can be replaced with kefir and milk without any problems. When I ran out of buttermilk, I also baked with kefir. I didn't notice much difference. We just sell buttermilk much cheaper than kefir. And I have not seen serum on sale, so I have not tried it on it. And the bread is really delicious, I bake it all the time.

There is a similar recipe in the instructions, but there you need to add 1 more tbsp. l. oils.
I made a change to the recipe from gulya29
Added 1 tbsp. l. vegetable oil.
Instead of buttermilk, I took low-fat kefir.
In addition to caraway seeds, I added 1/3 teaspoon ground allspice.

The bread is delicious and aromatic. Everyone at home liked it

baked bread today according to this recipe. The gingerbread man was very tight, the spatula helped to knead the stove very hard, instead of honey I added molasses, and a little more bran. Somehow, I didn't really like this bread. Is there no recipe for butter as it should be?

Why did you also need to add bran, if the bun could hardly toss and turn? First you need to add water to make the dough soft, control the flour / liquid balance.

Therefore, the bread is not tasty, too steep. We repeat again, only we control the thickness of the dough
