Ingredients

Fresh yeast 13 g
Sugar 100 g
Milk + whey 270 g
Softened butter 50 g
Sesame cake 100 g
Wheat flour 500 g
Salt 1 \ 2h. l.
For lubrication:
Butter 50 g
Sugar 30 g
Sesame 30 g

Cooking method

  • Grind yeast with 1 hour. l. sugar, leave for 10 minutes.
  • Heat milk and whey to 37C.
  • Add all ingredients and mix the dough on low speed for 2 minutes. Cover and leave for 30 minutes.
  • Next, knead until smooth for 7 minutes at maximum speed. Knead in Thermomix, mode
  • Spikelet. The dough is soft, sticky:

  • Fold the dough, place in a greased container, cover and leave for 30 minutes. Then knead, fold, return to the container and leave for 1 hour.
  • After a lapse of time, knead the dough, divide into 16 parts of 63 g. Form a bun from each, place on a baking sheet, cover and leave for 40 minutes.
  • For lubrication, melt the butter, mix the sugar and sesame seeds.
  • Before baking, grease the buns with butter, sprinkle with sugar and sesame seeds.
  • Place in a cold oven. Turn on 200C and bake until tender. The exact time depends on your oven. I have 30 minutes.
