And when the soul is on fire, then the price is not the price for us, I will buy it anyway and make the jam!
  • The author of the recipe was so enthusiastic about this jam recipe called French "Satin Confiture" that I really wanted to make it. In the process of preparation, she slightly deviated from the author's technology, but the meaning of the jam remained. And it is not entirely clear, for example, how to weigh "600 g of passionfruit pulp" when the fruit is very light, and all 15 pieces in the peel pulled only 800 grams, and even less without the peel - but these lilac round pieces are expensive!

  • Cut the mango into small pieces, put in a saucepan with a thick bottom, sprinkle with sugar and leave overnight to let the mango release their juice.
  • Put the pan on the fire, bring to a boil, reduce heat and simmer for about 20-25 minutes, until the pieces become transparent and begin to sink to the bottom of the pan. Remove the pan from heat and leave overnight.
  • Now break the mango pieces with a blender until smooth.
  • Put the pan on the fire again, add the orange juice, the inner part of the passionfruit, stir and simmer over low heat for about 10 minutes. Again, remove the pan from the heat and put to cool and infuse. The jam will begin to thicken, turning into a thick jam.
  • Put the saucepan with the thickened jam on the fire again, bring to a boil, reduce heat and let the jam boil for 3-5 minutes to warm the jam well.
  • Hot jam loves to "spit" and certainly in the face, and this is very painful, so I cover the pan with a lid that protects my face and hands from hot splashes, and at the same time allows air to pass through well, which makes it possible for the liquid to evaporate and not accumulate condensate under the lid.

  • Now I will pour the jam into jars. To do this, I put a special watering can in the jar with a wide mouth, which allows the jam to gently drain into the jar.
