Cooking method

  • Solyanka fish ... team. Based on the hodgepodge cooked by Dunduk. As he said - fully debugged. What do I like about Marat's stories about Food? About the one that he prepared. The recipes given by him are simple. Yes, yes ... for all the seeming complexity and intricacy, to prepare the Food, which he told about - simply and quickly. And the products are readily available and are not at all affordable. And the result is always the same. Very tasty and, with a little effort, beautiful.
  • So, thanks, Marat. Of course, I did not follow all of his recommendations, but I especially tried not to show my harmfulness. It turned out, I repeat, very tasty !!!
  • So.
  • The first rule, it is the same, in any case, if you decide to cook soup - you will not do without broth. No way. This is an axiom.
  • For the broth, we took what remains from any fish preparations since the summer. So to speak - a soup-broth set. Heads, fins, tails and rump. From all kinds of fish. Basically - from pike perch and pike. And the second, in addition to well water, constituent of any broth, no matter what it is ... fish and meat, not to mention vegetable, are roots and spices. Onions, carrots, a mixture of dried roots and lavrushka with pea pea.
  • We put the fish component in cold water, boil it, remove the foam. We keep on high heat until the foam ceases to stand out. Then put the roots in a saucepan, cover with a lid and ... not boil, but simmer. On the smallest fire. Take your time and you will have a super broth for a couple of hours, even, as it is now customary to express strong emotions, "WOW !!!" ... broth !!!
  • Yes. For “WOW !!! WOW !!! " it would be appropriate to add a couple of roots to the pan, or at least one root ... but! ... shit. This will give the broth a very… um… strong, piquant note. I have, alas, only grated in stock. And this will not be the calico.
  • 🔗
  • Basically, that's all you need for a hodgepodge. The only thing is that the onion will go to the soup differently.
  • 🔗
  • First of all, let's pay attention to shrimps. Because to cook ..., cool ..., clean ... all this takes time.
  • Note that the author of the recipe recommended crayfish. But crayfish did not happen in our selpa. So I replaced them. Shrimps.
  • 🔗
  • Here's what happens. And as we cut it, I recommend making it smaller. Why? Well, you know, in a spoon with soup, besides broth, something else should fit. It's tastier this way. True?
  • 🔗
  • Now about the bow. Again - referring to the recommendations of the author, it is best to take small onions and cut the onions into rings. They will look really interesting in a ready-made soup.
  • 🔗
  • Interesting name. True? The tomatoes themselves must be peeled. And no matter what kind of tomatoes you took. Live or canned. The skin, or, if you like, the skin - down with. Will get in the way.
  • 🔗
  • And then chop the tomatoes. Also fine. And, of course, don't miss out on the juice. Or sauce? In general - tomato pulp, as indicated on the can.
  • 🔗
  • Cucumbers. Salty! Exactly, I emphasize - salty! And no pickled ones. This is, perhaps, rule number two - only salty !!! And yet - a glass of brine is needed. Such that with currant and horseradish leaves, garlic and dill. And, again, no vinegar!
  • Cut into strips. Again, calculate the length so that the pieces fit into the spoon.
  • You can cut it into cubes, but for some reason, it is more delicious in strips.
  • 🔗
  • Olives and olives. Everything is simple here. I recommend buying these berries to seedless. And then picking out these is troublesome. And we cut into rings, also try to be smaller. The reason is the same.
  • 🔗
  • Mushrooms. These are salted milk mushrooms. Northern. They were collected on the Kola Peninsula and salted in a barrel there. According to the northern recipe. Almost tore it from my heart. You know, make them with sour cream. Oh and yummy. BUT!!! I really want a hodgepodge.
  • 🔗
  • Since according to the "law of the genre" it is better to put different varieties of mushrooms in a hodgepodge, I bought a jar of mushrooms ... pickled.
  • I took them out of the can and went through them. I removed all sorts of onions and other details from there. Washed very well. I cut it. Washed again. I even soaked it for an hour in salted water.
  • And ... I threw it away anyway !!! ... so as not to spoil the soup. Once again I was convinced that if the mushrooms are imported, it is better not to look in their direction. AS?! Can you eat this? Poor tolerant Europeans.
  • 🔗
  • Fish. That is, we removed all the fish from the broth and filtered the broth with high quality. And if the hodgepodge is fish, then there is no way without fish.
  • This is sturgeon. Something like a little smoked balyk.
  • 🔗
  • And this is sockeye salmon. Smoked too. The color seemed chemical somehow. And really! I tried it. Poured "liquid smoke" ... what a time, what a manners !!! Why spoil a product? Of course, having cut it, washed it. It didn't help much. A little bit of bitterness remained. Although, the bitterness was even appropriate. BUT!!! Anyway, I will not buy this anymore and I will not advise others.
  • 🔗
  • Well. Everything was prepared.
  • Now it remains to make a dressing for the hodgepodge. This is an extreme preparatory action.
  • Heat a piece of homemade cow's ghee in a frying pan. Don't take vegetable. The author of the recipe is right. Cow oil with fish is more appropriate.
  • And ..., I repeat, we do not heat the oil, but only melt it. And the onion (disassemble into rings) in the pan. While the onion is sautéing, remember to stir it gently all the time. Delicately….
  • 🔗
  • Here. Strongly not necessary. We don't need heartburn.
  • 🔗
  • And we send tomatoes with sauce to the pan.
  • 🔗
  • The fire is not strong. The regime should be very, I repeat, delicate. You need to get a soft, delicate ... I would say "pooled" taste. And not a bright "fry".
  • Transfer, cover and leave on the stove for ten to fifteen minutes. Tomatoes need to change their taste. To get a kind of grilled baked.
  • 🔗
  • Well, now ... as soon as it's ready, put the pan aside.
  • We begin to "collect" the hodgepodge.
  • Bring the broth to a boil and immediately pour the cucumber brine into it.
  • 🔗
  • Again we bring the broth to the "buns" and put the contents of the pan into a saucepan. Stir well, cover with a lid and leave ... again ... to sweat, not cook ... for about fifteen minutes.
  • 🔗
  • Then the cucumbers are sent to the pan.
  • 🔗
  • And mushrooms.
  • And mix again, cover and simmer for another fifteen minutes.
  • 🔗
  • Next comes the turn of olives and shrimps. Let them warm up for no more than five minutes.
  • 🔗
  • This time is enough for the soup, and this is almost exactly the "soup", to start bubbling again.
  • 🔗
  • It's the fish's turn. I'm afraid to sound boring, but you noticed that the fish is cut small. The goal, again, is to fit in the spoon.
  • 🔗
  • After ten minutes, pour the chopped greens into the pan. Dill and parsley. Do not need anything else.
  • 🔗
  • Maximum five minutes. All!!! Solyanka is ready. Cover with a lid and try to distract yourself for half an hour. To read Schillert there or listen to Schulbert, but to distract yourself and do not pull your hands with a spoon to the hodgepodge.
  • 🔗
  • Here. And this is, I remind you, at least half an hour !!!
  • Angela to you at the meal !!!

One fish will not help me well, I need it in a set with a cook.
MariS
It's a good idea to add brine (somehow I didn't realize it myself). And more mushrooms! We must try, thanks!
Ivanych
Sorry - this is not an idea. Pickle and hodgepodge are twins brothers! inseparable forever!

And I tore them apart ...

I probably don't know how to pickle cucumbers. I always add vinegar to the brine. Otherwise, it will not be stored. Where do you get vinegar-free cucumbers?

This is you in vain. This is what you make pickled. Salty - that's why they are salty ... to be in a barrel, but with herbs - leaves, but with horseradish ... UHHH !!!
toffee
In a barrel, you say? ... But where to put a barrel at home.
Ivanych

I'm still a newbie on the site, I can't figure out how to write in a personal message, write to me yourself, I'll throw you off a chic recipe for pickles without vinegar. They are called "Drunken Cucumbers". They stand like a glove. I have, however, in a cool place in the cellar. If there is none, make at least a few jars, they will stand on the balcony until frost
Ivanych
With the cellar it is of course. I have another year before last. Which were laid out in banks.

yes, everyone understands this ..... But, who does not have a cellar, they also hunt at least 2-3 cans of SALT, and not pickled cucumbers, but in the apartment such a quantity can be kept ... So I wanted Irina good recipe to give
Ivanych
And let this ... go to the village!
*Eve*
Yeah (ha-ha) They do not want a mustache in the sod, a fact (which does not prevent people from wanting pickled cucumbers!). Temka, of course, is interesting for discussion ... we bought a house in the village, like a dacha. Slowly equipping, all sorts of amenities, etc. Only there is no work nearby ... So if you move there permanently, you still have to come up with additional. income (except for pension, because pension is "cat's tears"). And to grow for sale, to keep livestock - not everyone has health. Share how you survive (if not a secret, of course)?
Ivanych
Help out the farm ...
