Pumpkin-curd dessert with red currants - summer food for children

Ingredients

For the pumpkin layer:
Gelatin powder 1 tsp
Sugar 1 tbsp. l.
Pumpkin decoction 2-3 st. l.
Thick pumpkin puree 170 g
For the curd layer:
Cottage cheese 9% fat (not grain, better soft) 170 g
Agar agar 1-2 tbsp. l. (depending on strength)
Sugar 2 tbsp. l.
Vanillin
Milk 100 ml.
Red currant berries
Powdered sugar for dusting

Cooking method

  • Pour the agar-agar with milk and leave for an hour or two.
  • First, prepare the pumpkin layer. Boil the pumpkin in a small amount of water. Pour the broth over the gelatin and leave to swell. Grind the pumpkin with a blender until puree. Cool down. Mix the puree and gelatin and heat in a water bath, not allowing it to boil. Place the glass in a bucket with peas or beans at an angle.   • Fill a third with pumpkin puree. Refrigerate.
  • Preparing the curd layer.
  • Puree cottage cheese well with a blender. Mix agar with milk (thick porridge) with sugar and heat in a water bath until it turns into a liquid mass. Mix cottage cheese with agar. Cool slightly.
  • Pour into a glass with frozen pumpkin. Send to refrigerator for solidification.
  • Put red currants on top (you can use any other fresh berries), add a little berry juice. Sprinkle with powdered sugar.
  • Serve chilled.

Alena is not accidental - pumpkin puree with gelatin, since I heat it less, and gelatin can leave a few crystals. The lovely pumpkin color will hide everything. But the agar needs to be very hot, so I did not put it in the pumpkin. Pumpkin puree is lightly stewed - all vitamins are preserved. And as for agar, I have not used it for a long time - I was afraid that it would not be taken. But in general it turned out to be strong. Thank you for your attention, I will add in the recipe.
