Cooking method

  • It so happens that in many recipes I have some kind of personal history. This recipe is no exception. I baked this bread for my mom. She lives far from me, in Alma-Ata. And on the phone he often says that he really wants me to bake something for her. And when our Alma-Ata friend came to visit us, I baked a loaf for him, and this bread for my mother.
  • Mom also loves horseshoes very much. She does not treat them as some kind of talisman. They remind her of childhood, albeit difficult, but very happy. Dad returned from the war alive. He worked at a power plant next to a stable. And my mother often visited him. And she always picked up horseshoes if she found them. I carried these horseshoes home and kept them among simple toys, like a great jewel. They are still with her. On her last visit to us, we found a huge horseshoe in the forest. Mom was so happy! And, of course, she took the horseshoe with her.
  • Therefore, when a friend called, I already knew that I would bake bread and give it to my mother. I made one bread into a bar, and formed a horseshoe from a small piece of dough. And since at this time I was decorating loaf, then I decided to decorate it.
  • Although I made the bread dough in the same way with liquid yeast from fermented "Village tea", the dough preparation technology for this bread differs from loaf bread.   • 1. Cooking liquid yeast.
  • 1.1. In a jar with a capacity of 0.5 liters. pour water at room temperature. Add 1 tbsp. l. honey (sugar) and stir. Add 2 tbsp. l. "Country tea". Close the lid and leave in a warm place (t = 25 - 27 * C) for 7 - 10 days.

  • 1.2. When a little foam appears in the can (on the 2nd - 3rd day), gently shake the can to release carbon dioxide from the liquid, open the lid and release the gas. This should be done 3-4 times a day.

  • 2.1. Mix liquid yeast and flour, add a little honey (sugar), cover with a film, puncture it in several places with a toothpick. I added honey to yeast and mixed thoroughly.

  • I made bread dough in a bread maker.
  • 3.1. Mix the pre-enzyme and all the other ingredients (except butter) until a coarse bun for 2 - 3 minutes. We reset the program and leave the dough in the bucket of the bread machine for 10 - 15 minutes for autolysis.

  • 3.2. We turn on the same program for a full cycle (I have 20 minutes) and knead the dough, controlling the bun. It should be soft and not sticky to the bucket. After 10 minutes, add butter and knead the dough until well-developed gluten.

  • 3.3.We spread the dough on a work surface, dusty with flour, and form a ball. Cover with a bowl and leave for 15 minutes.

It may take more or less time depending on the strength and "age" of the liquid yeast, as well as the temperature at which the dough is fermented.

  • I made two blanks. One in the shape of a loaf, and the other in the shape of a horseshoe. I took 120 grams for her. test.

  • 6.1. First, I baked a loaf. Sprayed the workpiece from the spray bottle with water. Sprinkled cornmeal on it through a strainer. I made cuts with a sharp knife. She baked in an oven preheated to 250 * C for 10 minutes, then lowered the temperature to 230 * C and baked until tender for another 20 minutes. Wrap the finished bread in a towel and let it cool completely.
