Pumpkin fluffy pigtail

Ingredients

Flour 500 g
Finely ground corn grits or flour 80 g
Milk (any, I have oatmeal) 240 ml
Honey 4 tbsp. l.
Dry yeast 10 g
Any unrefined oil (I have nut oil) 60 ml
Grated pumpkin 300 - 400 g
Salt 0.5 tsp
Peeled walnuts large handful
Grated nutmeg 1/8 teaspoon

Cooking method

  • Delicious, not very rich, fragrant bread in the form of a huge soft braid with a lot of pumpkin.
  • Preparation
  • - Rub the pumpkin on a medium grater, dry the nuts in a frying pan or in the oven, then grind them coarsely.
  • - Mix yeast with flour and liquid, let stand for 20 minutes. Then add the grated pumpkin, begin to knead, sequentially adding salt, nutmeg, honey and butter to the dough. We knead the dough well, you may have to add flour, since everyone has pumpkin different in moisture. Or water ... At first the dough is very viscous and sticky, by the end of the batch a normal bun is formed, not very dense.
  • Let the dough come up, then add nuts to it and do one kneading with kneading for 1-2 minutes
  • - After the dough comes up a second time, divide it into three equal parts (using a scale), form bundles and braid them on the baking mat, otherwise it will be difficult to transfer the pigtail to the mat. The braid turns out to be large from this amount of dough. We do not stretch or stretch the plaits strongly when weaving, we just weave tightly and compactly. We fasten the edges of the braid and put it on a proofer in a warm place, covering it with a towel.

  • - We bake at 230C for 5 minutes, then at 180C until tender. I check with a thermometer - the temperature inside the spit should
  • be 93-95 gr. We cut it after 5-6 hours. I had to cut it right away, I barely did it so as not to wrinkle it, so a very soft and fluffy pigtail was half the size of a table.

Note

Dough with a lot of wet ingredients (vegetables, fruits, cottage cheese, mashed potatoes, etc.) requires independent control over the amount of flour applied. For example, pumpkin is not as juicy now as it was in autumn, and therefore requires less liquid when kneading.
Despite the fact that there are a lot of pumpkins in the dough, the bread turned out to be soft, airy and not too moist.
Nut butter (I have a walnut), pumpkin and honey give a noble taste and undoubted benefits to such baked goods.

There will be a lot of juice in the frozen pumpkin, so if you think about it, you need to watch the flour. No matter how much I did not bake with pumpkin, even according to recipes that were not my own, I always had to add either flour or water. Then it is better to beat it, and take some of it into account in the liquid.

Sure you may! But you should be guided by the liquid yourself! And this is an idea, dry pumpkins!

I went with a report: yesterday I baked it, though (I confess, I’m a sinner), as always, I took water instead of milk (so I’m a pioneer, you can safely replace milk with water, whoever is not allowed), the family people tried it and said: cool, and then - yum-yum-yum ...
