Ingredients

Fresh gutted eel without skin 500 g
Onion 2 small
Butter or margarine 1 tbsp. l.
Flour 1 tbsp. l.
Meat broth 250 ml
White wine (Mosel Riesling) 250 ml
Salt and pepper
Lemon zest 1 tsp
Lemon juice 2 tbsp. l.
Capers 1 tbsp. l
Dill stalks 2 pcs.
Lemon slice and dill for garnish

Cooking method

  • - Wash the eel, if necessary, gut it, remove the skin and cut the fillet, cut into pieces of about 4-5 cm.

  • - Serve with lemon wedges and sprinkle with dill. This dish is usually accompanied by boiled potatoes, green salad and light white wine, such as Moselle Riesling.

EEL European - freshwater fish. Length up to 2 m, weight up to 6 kg.

The body of the eel is serpentine, almost cylindrical, covered with very small scales (mostly hidden in the skin), the dorsal and anal fins are in contact with the caudal and form a continuous border along the posterior edge of the body, the pectoral fins are short, wide, there are no abdominal fins. The skin is thick, durable, covering not only the body, but also the fins. Young eels have a dark greenish back, dark brown or black, a white belly, yellow-green tones prevail on the sides; with age, the sides become white, with a silvery sheen.

The eel lives in the waters of Europe from the White to the Black Sea. A valuable object of fishing and breeding; is mined mainly in the Baltic Sea basin.

Eel goes on sale fresh, smoked (mainly hot smoked), in the form of canned food ("Eel in jelly"). The meat is light, juicy, tender, contains 14.5% protein, up to 30.5% fat. Fresh eel is fried, baked, boiled. Acne ear is considered a delicacy. When serving smoked eel, as well as when cooking fresh, it is recommended to remove the skin from it.
