Cooking method

  • Dough:
  • Mix yeast (I have a saf-moment) with flour (I have a Macfa), add water at room temperature. Knead by hand so that all the flour is evenly moistened. The result should be a rather dense, but plastic piece of dough. Place it in a container, tighten the top with plastic foil or close the lid.
  • Fermentation at room temperature for 10-12 hours. During this time, the dough will increase in size by 2-3 times.
  • Dough:
  • Mix yeast with flour (leave one tablespoon of flour), add dough, sugar, water, mashed potatoes (or yesterday's mashed potatoes, in this case, reduce the amount of water in the dough by 10 ml).
  • Knead the dough for 6-7 minutes, add softened butter and remaining flour. After another 5-6 minutes, add salt to the dough. Knead the dough for 5-6 minutes. The finished dough is soft, slightly sticky, it is not smeared along the bottom of the bread machine bucket.
  • Leave the dough to ferment for 90 minutes. In the middle of fermentation, knead the dough once.
  • Dust the table with flour. Put out the dough, knead, shape a loaf. Place on baking paper, seam side down.
  • Lightly dust the dough piece with flour, cover with loose foil. Proofing - 60 minutes.
  • Preheat the oven together with a baking sheet and an empty water container (at the bottom of the oven) to 230C (convection 210C) degrees.
  • Make several oblique cuts on the dough piece, transfer to a hot baking sheet.
  • Pour about half a glass of boiling water into a container for water.
  • Bake bread with steam for the first 10 minutes at a temperature of 230C (convection 210C) degrees, then slightly ventilate the oven from excess steam, reduce the temperature to 200C (convection 180C) degrees and bring the bread to readiness. The total baking time for me was 40 minutes.
