Ingredients

pork 1 kg
bacon 1 kg
pork liver 500g
salt 50g
marjoram 10g
onion 400g
pepper 10g
allspice 4g
nutmeg 10g
bouillon 500ml

Cooking method

  • This liver sausage can be cooked both in the shell and in the jar. I did both. Boil pork with roots on the "Soup" program 0.7 for 20 minutes, cool, keep the broth. Coarsely chop the bacon and onion and fry until golden brown. Clean the liver, chop coarsely, pour boiling water over and boil for 30-60 seconds. Scroll everything twice through a meat grinder:

  • Add salt (I added 20g of nitrite salt and 30g of regular salt), seasonings and broth. Mix everything well for 10 minutes until the broth is completely absorbed.
  • If you do it in a shell, then prepare it, stuff it through a special attachment for meat grinders, not tightly (it took me 2m of a protein shell of 45mm caliber). Cook at 80-85 * C for 2 hours. I evacuated into a bag and cooked at T = 82 * C. After cooking, cool immediately under cold water and place on the coldest shelf of the refrigerator.
  • To prepare in jars, lay out in sterilized jars, without adding 2 cm to the top, and close the lids loosely. For immediate use, I used a ceramic pot. Place the jars in a bowl of water up to the shoulders of the jars and cook for 2 hours at T = 90-95 * C. I did it at 92 * C on the "languor +" program. After the signal, remove the cans and close the lids tightly. Can be used within 3 months, keep refrigerated.

Note

In the oven, sausages can be cooked at T = 95 * C for 2 hours, cans at T = 150 * C for 2 hours.
