Ingredients

coarse barley flour 250 g
wholemeal rye flour 250 g
sugar 50 g
serum 200 ml
baking powder 1 sachet (10 g)
butter 100 g
coriander 1 tbsp
ground cinnamon 1 tsp
ground cloves 1 tsp
chopped hazelnuts 70 g
yoghurt to grease the surface of the bread

Cooking method

  • Both types of flour (I did not find coarse grinding, wallpaper flour, for greater similitude, you can add cereals or flakes, observing the proportions) sift into a bowl and mix well with sugar, baking powder, coriander, cinnamon, cloves.

  • Grind the resulting flour mixture with butter, add whey (there was none - therefore I added 1 tsp of sour cream to the water) and knead the dough well.
  • Mix the nuts into the dough. She baked in the Miracle Oven, warming it up for 5-10 minutes and greasing it with vegetable oil. We spread the dough with a brick in the Miracle oven (it keeps the shape well).

  • Lubricate the surface with yogurt and bake for 40 minutes, turn off and let stand for 10-15 minutes; after which we get out of the Miracle Oven. It turns out a very aromatic spicy bread, the crumb is dense and very crumbly (for a better representation of the consistency, it can be compared with stollen, but less butter and sugar - bread, however). Immediately after baking, a rye taste is felt, but after several days, the taste becomes more balanced and crumbles less. It can be used as dessert bread or as usual for sandwiches (with cheese, meat, etc., but not at lunch), I think, depending on the taste, you can put less spices and I didn't have enough salt to balance the taste.
  • Cook in the oven at 150 ° C for about 1 hour, this temperature and the consistency of the dough should be good for baking in a multicooker for Polaris - this is usually 1 hour - 1 hour 20 minutes, check with a toothpick.
