Austrian pumpkin cream soup

Ingredients

Peeled pumpkin 500-600 g
Sweet pepper 1-2 pcs.
Carrot 1 PC.
Shallots (or onions) 2-3 pcs. (1 pcs.)
Garlic 2 prongs
Butter for frying 2 tbsp. l.
Pumpkin seed oil 2 tbsp. l.
Nutmeg, allspice, rosemary taste
Cream (soft cheese) from 100 ml (to taste)
Chicken thigh and chicken liver broth 1.2 liters

Cooking method

  • Preparation
    Chop onions, carrots and bell peppers in a food processor with a knife and put in a saucepan in which the soup will be prepared.
  • Add butter, whole garlic cloves and fry until soft.
  • Austrian pumpkin cream soup
  • Then add finely chopped pumpkin, pumpkin oil and fry, stirring occasionally, until the pumpkin is half cooked.
  • Austrian pumpkin cream soup
  • Add the fried mixture to the broth, cook for 15 minutes until the pumpkin is ready.
  • Five minutes before the end of cooking, add a couple of pinches of musak nut and allspice (3-4 pcs.), Salt.
  • At the end, remove the allspice. We punch the soup with a blender or in a food processor with a knife until puree. (I personally prefer to pass it through a press so as not to bring it to a homogeneous state, this is the consistency that soups are served in good restaurants.)
  • Add cream (at least 100 ml) to the hot soup and serve with crackers.
  • I advise you to add a couple of pinches of smoked paprika to the soup when serving - we had a chance to try this option in Austria.
  • I cooked the soup in a soup cooker. She grinded in it, without bringing it to a paste-like state, fried at 120 gr. and cooked, pouring hot broth.

This soup will not lose any taste if made entirely in water.

I advise you to try the serving method, which I especially like - instead of adding cream, just put some cream cheese like Almette on top, well, very tasty! You can also sprinkle with caraway seeds!

I couldn't get the taste of the soup that I had a chance to taste in a small Austrian restaurant.
This recipe opened my eyes to the missing ingredient - pumpkin seed oil. But even without it it will be delicious if you replace it with high-quality vegetable oil.
By adding smoked paprika, it was possible to finally bring the taste closer to the original.
If you save pumpkin (and in stores it is already expensive), then put one medium friable potatoes in the pumpkin soup.
