Ginger (root) 1 PC.
Garlic 3 teeth
Olive oil 4 tbsp. l.
Soy sauce 80-100 ml
Apples 6 pcs.
Onion 1 PC.
Cabbage (preferably red cabbage) 1 kg
Bacon 250 g
Beer dark 500 ml
Tomato paste 50 g
Honey 50 g
Ground cloves 3 pcs.
Salt pepper taste

Cooking method

  • Homemade paper lantern and roasted goose are two main attributes of one of the brightest and most interesting holidays in modern Germany, St. Martin's Day (Sankt-Martins-Umzug). It is celebrated annually today, November 11th, symbolizes the end of the harvest season and is dedicated to love and attention to others, emotional responsiveness and sharing. At the origins of the holiday lies the legend of Martin of Tours, who lived in 316-397 and dreamed of becoming a monk. Once, when he served in the Roman army and in the late, cold autumn made a transition with his legion, then on the way of the military he met a frozen, half-dressed, hungry beggar, begging for alms. All the soldiers, "chained by one goal," passed by, and only Martin stopped, gave the beggar his provisions and, chopping off half of his cloak with a saber, sheltered him from the wind and rain. Then he had a dream in which Jesus confessed that it was he who came in the form of a beggar and thanked Martin for his mercy and compassion. Later Martin adopted Christianity, widely promoted it and earned the love and respect of his fellow citizens. But at the same time, Martin was very modest. There is a legend that when they decided to elect Martin bishop, he, who considered himself unworthy of such an honor, hid in a flock of geese, but they betrayed him with their cackling. And now they pay annually for their betrayal - this is the explanation for the first attribute of the holiday. And the second - a flashlight - is due to the fact that after the end of the harvest, in all the yards and on the streets in large bonfires, baskets for fruits that became unnecessary were burned, and this process was accompanied by fun and games: they jumped over the fires, lit torches from them and arranged with them festive processions. And the second hypothesis: once Martin got lost, and local peasants in the dark went looking for him, taking torches with them. Nevertheless, in our time on this day, both Catholics and Protestants arrange festive processions with "Saint Martin" at the head - a horseman in a Roman soldier's costume, with homemade paper lanterns in the hands of children and torches in the hands of adults and singing hymns Saint. And after the procession, children go to shops, cafes and neighbors with carols songs and receive sweets and treats prepared in advance for them.
  • Grate the ginger, chop the garlic, and, adding soy sauce and two tablespoons of olive oil, prepare the marinade with which to grate the carcass. Peel the apples, remove the seeds, cut into wedges and stuff the goose with them, sew up the hole and bake the goose in heated to 180about oven for 1-1.5 hours.
  • For a garnish, fry finely chopped onion in olive oil, add thinly chopped cabbage and bacon, tomato paste, simmer, stirring occasionally for 15 minutes. Then pour in beer, honey, season with cloves, salt and pepper, cover and cook until tender.
