Cod fillet 1 kg
Salt, ground pepper and lemon juice for the marinade taste
Butter 3 tbsp. l.
Fresh Soup Greens bundle
Onions and bay leaves 1 pc.
Allspice (pimento) 4 things.
Flour 2 tbsp. l.
Egg yolk 2 pcs.
Spicy mustard 2 tbsp. l.
Salt, sugar for the sauce taste
Wine white vinegar taste
Water (boiling water) 1.5 l
Low-fat cream 250 ml

Cooking method

  • Freshly boiled cod in a fragrant broth with a delicate spicy creamy mustard sauce - what could be better for fish lovers!
  • I will say right away that I really like the recipe, and with a clear conscience I recommend it even for a festive table! Especially for those who are tired of fried fish.
  • Of course, the only condition for getting a good result can only be high quality white fish, not necessarily cod.
  • Preparation
  • We take cod fillets, wash, dry and salt well, bake and pour with lemon juice.
  • We set aside to marinate for 15 minutes.

  • At this time, prepare the broth.
  • Chop the greens coarsely and stuff the peeled medium onion with bay leaves. In a saucepan or a thick-walled saucepan, add chopped herbs on one tablespoon of butter, then pour 1.5 liters of water. Add 4 pieces. allspice.
  • Bring to a boil and put the prepared pieces of fish in the water, reduce the heat and boil the fish over low heat for 8 minutes. Do not bring to a strong boil, otherwise the fish will fall apart - the water should move slightly. (The broth can be slightly salted to taste.)

  • Remove the fish and keep warm. (I just left it in the broth)

  • Melt in a saucepan (I did it in a small multicooker on manual mode 110 g.) 2 tbsp. l. butter and add 2 tbsp. l. flour, pass the flour to a little! golden color. Then pour in 250 ml of strained fish broth, mix well and add cream. Bring the sauce, stirring constantly, to a boil, until the first "buns". We remove from the stove.

  • Mix mustard, fresh yolks, salt, sugar and wine vinegar (1 tsp to start) in a bowl and add a little to the sauce, stirring constantly.
  • Season with ground pepper, if desired, add vinegar, salt and sugar to taste.

Note

I made the only deviation in the recipe that did not affect the basis of the recipe in any way - I replaced 1 tbsp. l. spicy, home-made, Dusseldorf mustard for ready-made grain mustard, as I was afraid of being too hot. But the sauce has become more interesting in appearance!

If you still play around with the recipe, I suggest replacing the wine bite with lemon (lime) juice and add a little lemon (lime) zest to the sauce.

Please note that there is a lot of sauce, since the recipe is designed for 1 kg of fish !! I turned everything down on my own.

From the rest of the broth and a piece of fish, after adding carrots and potatoes, we got a wonderful fish soup!
And I also liked to stuff onions with bay leaves! We cut the onion a little with a knife and stuff the pieces of lavrushka into the slots - then we easily take everything out of the broth!
