Ingredients

A hen 1 kg
Bacon (raw smoked brisket) 200 g
Champignon 200 g
Dry red wine 300 ml
Bulb onions 1 PC.
Carrot 1 PC.
Garlic (not used) 1 tooth
Olive oil (I have ghee) 3st. l.
Wheat flour 1 st. l.
Salt pepper taste

Cooking method

  • Peel the carrots, cut into thin slices. Next time I will cut into cubes. So. it seems to me. it will look more harmonious.
  • Peel the onion, cut into thin half rings.
  • Pass the garlic through a press. I didn't use it, because I just forgot about it.
  • Cut the chicken in portions. I had hips (I removed the skin beforehand, soaked my hips in water for 1.5 hours). Season with salt and pepper. Add prepared vegetables, stir, pour over with wine and put in the refrigerator overnight. I got 6 hours.
  • Cut the mushrooms into thin slices. Cut the bacon into small cubes.
  • In a bowl with a thick bottom (I have a cast-iron wok), heat the 1st. l. oils. Fry bacon and mushrooms until golden brown, set aside.
  • Remove the chicken from the marinade, pat dry with towels. Save the marinade.
  • Add the remaining oil. fry the chicken on both sides until golden brown. Postpone.
  • Put pickled onions and carrots in a pan, fry, stirring occasionally, for 5 minutes. Add flour, stir. Pour in the remaining marinade. bring to a boil, return the chicken, close the lid. reduce heat and simmer for 20 minutes.
  • Add mushrooms and bacon, stir and simmer for another 5-10 minutes without a lid. Salt if necessary. I didn't salt. because the bacon itself is salty.
  • Serve with sauce and plenty of white bread for dipping.))))
