Weihnachten waffelhoernchen (New Year's waffle cones)

Ingredients

for a thin waffle iron:
Sugar 200 gr.
Butter 200 gr.
Egg 2 pcs.
Ground anise 1 tbsp. L. (it seemed to me a little too much)
Ground cardamom 1 tbsp. l.
Water, boiling water 1 l.
Wheat flour 450 gr.
for a regular waffle iron additionally:
Corn starch 7h l.
Soda on the tip of a knife

Cooking method

  • Waffles have been around since the 13th century. For the first time this confectionery delicacy appeared in Germany. The word "waffle" comes from the Frankish word Wabe, which means "honeycomb", as the impression of the baking dish of this delicacy resembled a honeycomb. By the XV-XVI centuries in Europe, waffles became available only to people of the noble class and kings. The recipes were kept in the strictest confidence, for their disclosure there was severe punishment, up to the death penalty. Several centuries later, hot waffles were sold right on the streets, everyone could see how fragrant thin layered confectionery was baked before his eyes. Johann Strauss, Johann Wolfgang von Goethe and Sigmund Freud were real fans of waffles. Waffles are a favorite treat for both adults and children.
  • And it is only in Russia that the New Year smells of tangerines, and in Germany it smells of spices and baked goods! Another New Year's recipe is a waffle cone.
  • There are familiar types of patterns for waffle irons, but there are, for example, these interesting ones:
  • Weihnachten waffelhoernchen (New Year's waffle cones)Weihnachten waffelhoernchen (New Year's waffle cones)
  • Melt water, sugar and butter until sugar dissolves. Cool to room temperature (in a sink with water, for example), add everything else. If there is no waffle iron for thin waffles (I do not), then add starch and soda. The recipe says that the dough needs to stand for an hour, we are waiting. We spread 2 tbsp. l. dough and bake waffles, twist into cones or tubes.

Do the horns taste crispy?
CurlySue
Thanks for the recipe! It will be interesting to try with spices.
I bake similar horns almost every week, but I do not add seasonings, but only vanilla.
I don't put soda. It is not needed for thin wafers.
I do not melt the products, but mix everything at once. The sugar itself dissolves during the kneading process.
The horns will definitely be crispy if you put starch in them - preferably corn starch. I put a little less starch, about 2-3 tablespoons, because the more starch you put in, the faster they will begin to "stiffen" after you remove them from the frying surface with a spatula.
You need to twist sooo quickly.

Elena, after 12 hours they are crispy but not crumbly. I don’t know what they will be without starch and soda in a thin waffle iron, but the dough is very liquid, I wanted to add flour, but didn’t start to play it off))) Cinnamon waffles are crispy and crumbly, like sand.

CurlySue, Elena, thanks for the useful information to Elena and me

I will definitely do it, my waffle iron is exactly the same as in the photo, it was bought back in Soviet times. She bakes thin waffles.
NataliARH
as in whose photo?) with a picture which? if anything - it's never too late to add starch, let it disperse for at least 30 minutes
CurlySue
NataliARH, I did not write that WITHOUT starch, I wrote that the bed is about 2 times less.
As for the soda - it is simply not needed there, because the dough turns out to be crispy and, one might say, not at all airy - there is simply no need for soda in it.
These recipes are still grandmother's - then we also had such a large old electric waffle iron. And I remember this taste and smell since childhood ... I ate the dough and so simply - with spoons. barely drove me away.

Just try it without baking soda.
I have them crispy and crumbly even after 4-5 days. On average, I bake a portion and eat it for 5 days in a row,
of course, I spread boiled condensed milk on a tube just before serving.
