Chocolate buns Buchteln with chili (Buchteln)

Ingredients

premium wheat flour 400 g
milk 70 ml
yeast 20 g fresh or 7 g dry
egg 2 pcs
egg yolk 2 pcs
butter 60 g
zest of 1 orange or dry zest 3 tsp
sugar 50 g
dried chili pods (small) 1-2 pcs
chocolate black 1 tile (90 g)

Cooking method

  • Well, I decided to try my hand at the competition
  • The dough can be made both by hand and in HP. I will describe both methods.
  • By hand or with a dough mixer
  • Prepare dough: warm milk to room temperature, add 1 tsp. sugar, yeast and 50 gr. flour, stir and allow to swell for 20 minutes in a warm place. Next, knead a smooth dough from the dough, yolks, eggs, the remaining sugar, melted butter, orange zest and flour. Cover the dough and leave to rise for 30 minutes.
  • I kneaded the dough in HP
  • Add all the ingredients for the dough (milk, eggs and yolks mixed with a fork, melted and cooled butter, orange zest, sugar and flour) in a bucket of HP in the order prescribed by your bread baker and put on the "Dough" mode (I have 1.5 hours ).
  • At the end of the program (or proving the dough for the first method), the dough will double and be quite steep. Divide the dough into 15 pieces, roll each into a ball. Crush the chili pepper in a mortar. After flattening the balls, make tortillas, put a piece of chocolate in the center of each and sprinkle with a small amount of chili flakes on top.

  • Form balls from the cakes again, having sealed the seam well, put in the mold at a short distance from each other with the seam down, cover with a towel and let rise for 30 minutes.
  • This is how buns look like before being placed in the oven.

  • Brush the buns with melted butter or warm milk. Bake at 180 degrees for 30 minutes. Cool in shape
