Ingredients

Fresh apples 2 pcs.
Onion 1 PC.
Lemon 1 PC.
Egg yolks 2 pcs.
Cream 20% 150 ml
chicken broth 600 ml
Corn starch 1 tbsp. l. on horseback
Curry powder 2 tsp
Salt, sugar, ground black pepper taste
One pretty apple for decoration

Cooking method

  • I suggest you please your guests with a themed lunch, consisting of German cuisine. Such a happy thought came to my mind when I decided to participate in the Steba competition "Dishes of German cuisine".
  • For myself, I decided that lunch should be light, as balanced as possible, consist of three courses, some of which can be prepared the day before. And most importantly, it is advisable to offer guests several delicious desserts to choose from!
  • Also, taking into account the German frugality, I wanted to choose such recipes so that all the ingredients were available for them, and after cooking there were no leftovers. Well, the choice of recipes also had to refute the widespread misconception that all German cuisine is heavy, fat and not suitable for every stomach.
  • The first dish we will cook will be Apfelsuppe (Apfelsuppe-Austrian Apple Soup). (I plan to serve this soup cold, so you can cook it beforehand.)
  • Prepare a Swabian dish for the second "Herrgottsbeschei erle".
  • But I propose to cook several desserts: Rote Grutze (Red porridge) and gentle Bavarian cream with Rote Grutze... They will complement each other and at the same time will allow all eggs to be used without residues.
  • We will entertain guests with stories about the origin of the listed dishes and several entertaining stories, leaving it for last, in order to keep the intrigue to the end and not immediately reveal the secret, which, for example, are related, albeit unusual in composition, but still quite familiar to us, dumplings to God. Or why is jelly called porridge !?

  • 1. Chop an onion and peel two apples. Saute the onions in warmed vegetable oil in a large saucepan until they are translucent.

  • 2. 2 tbsp. l. Mix chicken broth with curry powder and starch, pour into onions, simmer for 2 minutes, add 2 diced apples without peel and seed pods and pour in all the broth.

  • 3. Bring soup to a boil, stirring occasionally, add sugar (pinch), juice and lemon zest to taste and cook for 20 minutes.

  • 4. Cool the soup slightly and then strain through a sieve or stir in a blender.

  • 5. Separate the yolks from the whites, whisk the yolks with the cream and combine with the soup. Save the proteins - we'll use them later.

  • 6. Serve the soup immediately warm or cold after chilling in the refrigerator.
  • 7. Decorate the soup with apple cubes or herbs before serving.

Note

I cooked this soup with some caution, but it turned out to be so tasty, unusual and even beautiful that I will definitely cook it, especially to surprise guests.
The taste is delicate, fresh, with a slight, barely perceptible burning aftertaste, I think, depends a lot on the aroma and taste of the apples themselves.
Surprisingly, our taste didn't need salt at all.
It is better to use two apples of different taste in the recipe - sour and sweet, and add lemon juice and sugar with caution, having previously evaluated the taste for acidity and sweetness.
Using this recipe, you can make a soup from juicy delicious pears.
