But you are an experienced baker, what will happen for a dough for 300g of flour - 200ml of water-milk, I don't remember what is in the recipe? And you get a soft, plastic dough. Right?
Conclusion: I do not weigh, but I take the volume!

That's right, the dough turns out to be excellent if you measure it with a glass! When measuring with a glass, I do not tap it, so I shake it slightly in my hand. Measure once with glasses and weigh, see what kind of dough you will have, and write it down in grams, if it is more convenient for you.
