Ingredients

eggplant 2 pcs
Sweet pepper 4 things
Mozzarella 250 g
Parmesan 100g
olive oil

Cooking method

  • And I'm again with eggplant.
  • We bake the peppers, put them in a bag, let them sweat and peel them. I did it in the Philips Airfryer. Cut the eggplants into plates alongside, sprinkle with salt and leave. After 20 minutes, rinse, dry and fry. This time I did not leave them with salt, but immediately put them in the oven to bake, sprinkling with oil.
  • While my vegetables were baking, I chopped carrots and onions in a blender.

  • I put the vegetable mixture in a frying pan preheated with olive oil and fried for 5-7 minutes. I added squeezed garlic and tomato pulp with juice. Close with a lid and simmer for 10 minutes. Add dry herbs, salt, pepper, heat up and turn off.
  • Grate mozzarella on a coarse grater, fine parmesan. Cut the peeled peppers into 4 parts.
  • Spread out the bottom of the form 1/3 of the sauce.

  • Then half the eggplant, half of the mozzarella on top and a little parmesan, and chopped basil.

Note

Very nice! Is it like a moussaka? Or a different taste?

As far as I remember, minced meat is added to moussaka and there is no pepper. Therefore, the taste is different.
