Ingredients

almond 65 g
granulated sugar 75 g
egg 1 PC
yolk 1 PC
corn starch 10 g
cream (any fat content) 65 g
fresh cherry with pits taste

Cooking method

  • Grind the almonds (not peeled) into small crumbs. I chopped it in a blender bowl, adding one tablespoon of granulated sugar (from the total amount) to the nuts, pulse mode.
  • Beat the egg and yolk until light foam. Add cream and beat again.
  • Add almonds and starch, stir until smooth.
  • Place the dough in a baking dish or portioned baking tins (fill small tins with dough to a maximum of 2/3 of the volume).
  • Bake in an oven preheated to 180C (convection 160C) degrees for 7-8 minutes.
  • Remove the mold from the oven, add the berries.
  • Return the mold to the oven and bake for another 20-25 minutes. The top of the clafoutis should "grab" and acquire a light golden hue.
  • Serve warm.
