Gazpacho cucumber with mint

Ingredients

Fresh cucumbers 4 things. large
Mint or lemon balm 1 large stem
Garlic 4-5 teeth
Bulb onions 0.5 - 1 pc.
Green onion 1 bundle
Rucola, dill taste
Vegetable oil 1.5 tbsp. l
Sugar 0.5 tsp
Salt pepper taste
Lemon Juice / Citric Acid 0.5 lemon / 0.25 tsp

Cooking method

  • Cut one cucumber and onion into small cubes, two cloves of garlic into thin slices, finely chop green onions, arugula, dill and mint / lemon balm. Chop the rest of the cucumbers and garlic in a blender, add oil, salt, pepper, sugar and citric acid, chopped vegetables and herbs.
  • It seemed to me too thick - spread it with mineral water.

The recipe in the main part is from the site "Women's Weaknesses". I simplified the recipe a little: I canceled the twenty-minute marinating in the refrigerator of those vegetables that would then go to the blender. And added my favorite rocket. The result is a delicious cold soup: spicy, aromatic, with a slight nutty smell.
So I do not pretend to be authentic.
The author suggests adding cottage cheese to the plate. I haven't tried it with cottage cheese ...

The soup is very, very. It seems to me that you need to add mineral water to it, otherwise it will be a salad. I would not add cottage cheese either, but cubes of mozzarella or Adyghe would probably be nice. Thank you.
