Fermented tea made from leaves of garden and wild plants (master class) (page 48)

I took the meat grinder home already. The season is over, the last days at the dacha. Spun easily and did not get clogged, turned it in reverse several times and turned it back. There is also little waste. Look at the granules, there is no dust at all:

So for myself I decided now to do it only in fabric and not to suffer with tedding.

What a handsome ! You can clearly see how strong the worms are! By the way, the first year I made tea mainly on a fine wire rack. And nothing, it was spinning normally.
In general, Ksyusha, thank you very much! And then I toil all, how to twist my tea. Since Sunday, the Hydromet has canceled the rains, you need to return for tea. I’ve been out for a week now.
I wanted to thank you for this "bike", but I was told that in an hour only it is possible ...
By the way, francevna also wraps leaves in cloth. But she does leaf tea!
Omela
This is on a standard grill for a Soviet meat grinder, as I understand from your photo that it is considered small. And on the electric one, too, I twist at the same size, but there I still have both smaller and larger ones. I began to do with a cloth, as I bought an electric meat grinder, because it makes a noise, and I left the leaves at night to twist in the morning. But she did not understand all the charm. But the manual one made a difference.

In general, you can advertise for Ivan-tea with your tea! Looks better than those who sell tea at a high price. And about the taste, and so it is clear!
On Monday I will start making tea again. And then I will check this option on my ancient Soviet meat grinder. With a simple withering she resisted ...

So I also wither in the fabric, I also drag myself with this twist, like that fool, now in the house, now under the pillow, it's cold, after all, nothing withers. The onions will not really dry out, I washed the lingonberries yesterday, stood on the street all day, they are still damp. And it rained all night today, when will we collect the fireweed now? Maybe it won't rain even during the day, the girls from their former work promised to come, go for lingonberries, and the weather ...

no
twisted into rolls to obtain leaf tea, it is not minced
in a meat grinder, the tea turns out to be granular

Oh, I also wrapped it in cloth, I thought it was necessary to wither it .. If you don't cover them with something, the leaves will begin to dry out. When she brought a lot of leaves, she used a sheet. But I did not fold tight, but threw on top.

elena kadiewa, do you wash the lingonberry leaves? it grows in moss, it's clean there.

I've collected a little strawberries, but some of the leaves had to be washed, they grew on the sand.
Linadoc
Luda, girls, I also twisted it into the fabric and thought that this is exactly what was needed! This is why my old and underpowered Bimatek handled them easily! About borage, as an independent tea, is rather weak, but it will go well in mixed drinks. Tea with a light fruit-cucumber fresh aftertaste, there is no strong aroma, but it can stay and pick up. So you can use it.

Girls, gathered up different leaves yesterday, and doubted whether black currants fit? otherwise I have both red and white ...

I adapted 7 linen towels for rolling (they were already old, I wanted to throw them away, but they were so useful).I roll it very tightly, and so that they take up less space, do not crumble, I wrap all the rolled towels in one cloth. If it's cold, you can wrap it in plastic and something warm, and forget it for 12-24 hours.

Well, girls! The season, one might say, is moving towards the end, and you are only now revealing your chips. Why did I show the leaves wrapped in cloth in the willow tea recipe? This is so that if the leaves have already wilted, and we do not have time to deal with them. Then we define them in the fabric. I understand that the fabric will take some of the moisture from the leaves, and they will become lethargic. But I collected them there in a heap and not for long. And you went further. And it turned out that this method gives stronger granules and easier to handle with a meat grinder.
In general, class! Well done!

Oksanacertainly fits! She is the most stocky of all currants. I didn't even make it out of white and red. The recipe is about black.
Elena Kadiewa
Mary, I don't collect lingonberry leaves, they are very tough, I need them through the freezer, but I don't have that opportunity. Lingonberries do not grow in moss, these are cranberries in swamps in moss, but I actually wrote about lingonberries, now the season, I really love to pick them, I ice berries and compotes, but I don't like to pick or eat cranberries.
GenyaF
Oksana - Loksa! This is some kind of kick! I rode along all the neighboring streets, there is no sophora anywhere! No-no, the trees are standing, but there are no pods at all, only the old ones of last year are hanging on the 17th, a relative leaves me by plane to St. Petersburg, until that time I’ll run through other places (well, I need to walk a relative))), maybe I’ll find where pods. But this is generally somehow strange, there are no new pods at all, although this year people also complain about grapes, and the figs have also decayed, and there are almost no almonds (we have our own two huge trees)

Mary, I don't collect lingonberry leaves, they are very tough, I need them through the freezer, but I don't have that opportunity.

Under St. Petersburg, lingonberry grows in the forest in places where there is moss - there is a swampy area. Mother-in-law, near Seliger, have pine forests, so there you can pick lingonberries in sneakers. But it's still dry and clean everywhere.
I collect leaves every year - the first remedy for kidney problems. I have a long-standing problem, it hasn't happened for a long time. These leaves are simply dry. Here we must try to make tea with them, but this year again we collect too late, they are already tough. In general, it is correct to collect them during flowering, but I can’t get there at this time, when I had time, they are so delicate that the meat grinder should scroll them well. And drink tea exactly as a medicinal one, in courses. For usefulness, do less fermentation. And it will take up less space and brew faster. If possible, next year I will try to have time to collect it early. I'm smart now))

And the lingonberry itself, like the cranberry, I use for fruit drink - we all like to drink it)) Compotes somehow did not take root with us

Lyudmila, this is how you were misunderstood with the fabric, but how great it turned out)) I actually understood that the fabric should be immediately closed for drying.))

Mary Poppins, I'm still that nerd! I don’t know most of the plants growing in the area. So, when my husband and I were collecting blueberry leaves for tea, I collected most of the lingonberries. Later my husband enlightened me at home where the lingonberries are and where the blueberries are. In general, I was worn out with that tea. Nothing was done to the leaves! Neither the freeze took them, nor the rolling pin ... What they were, they remained so.And sticking to your hands - do not tear it off! I wanted to spin them in a meat grinder, but I was afraid that these sticky leaves would clog the meat grinder. So she did it as a sheet. Tea turned out to be a lot in volume and little in weight. And he did not impress me. I threw it on the mezzanine. Maybe it'll get better by winter.
Fermented not for long.
here is a photo of this tea. Left - fermented, right - dried leaves.

Fermented tea made from leaves of garden and wild plants (master class)
Mary Poppins
lappl1and when did you collect them?
And the leaves are dryish? how did you get them to ferment?
I'm doing a village today. Part of the leaves - freezing plus a bag while they were defrosting, plus it was not up to them - about five hours, some right from the garden - there was no time to wither at all, they lay in the fabric for a couple of hours, but remained crunchy. I cut it, shaved it and under oppression, stood for about five hours - they at least have something, there is a smell, but they are dry and the color has not changed. Left to stand until morning. Won't spoil it?

Thanks for the photo, you have a very noticeable difference between fermented and dried.
lappl1
Quote: Mary Poppins
and when did you collect them?
Mary Poppins, collected on July 17.
Quote: Mary Poppins
leaves are they dryish? how did you get them to ferment?
Well yes! I say that I was worn out with this tea - I froze it, rolled it with a rolling pin for a long time, crumpled it with my hands! During these torments I moistened the leaves with water from a spray bottle, then put heavy oppression. In general, the most difficult of all teas. Fermented tea tastes a little sour than dried leaves. One thing calms down - there is benefit in it. I will mix with other tea.

Quote: Mary Poppins

I think it will be fine. It's not hot right now, so don't over-ferment.
Mary Poppins
Oh, thanks for the quick answer)) otherwise I am just tormented by doubts - go to bed or go to fry and dry))

It's too late on July 17th. I collected in June, so they were tender. Next summer I'll try to put it back together early.
But on the other hand, there is no big meaning in tea. You can leave it only as medicinal, and it gives a dark color even without fermentation.

And about fermentation, I asked, yes, it was the nuance with water that cleared up)) I did this with raspberries and even from a spray bottle, but I sprayed it with my hand, I almost started pouring water there)) such a dry raspberry this year. It is still dry and remained after fermentation. Or maybe it was necessary to keep it longer .. She stood with me for only five hours.
lappl1
Raspberries are dry even in rainy summer. Last year, the whole of July was rainy. The berry was so juicy that it could hardly stay on the branch. And the leaves were still dry. And the currant is the same. So now I will make it with an apple or pear leaf in a meat grinder.
Quote: Mary Poppins
Or maybe I should have kept it longer ..
I noticed that garden plants, except for cherries, do not like long fermentation very much. So 5 hours is very good.
Mary Poppins
(n) I'm a bad girl)) some kind of fermentation))
Fermentation, of course)
With raspberries, good. Hope you get a delicious tea. I haven't tried it yet. In a month or two I'll start trying my teas.
Tomorrow I will finish and pack our suitcases - we will have a great migration from village to city.
For this season, my tea-making is over .. Eh, and there are still so many leaves on the fruit trees, even sad ..

In a whisper so ... virgins, why don't we sleep, okay, I went to the subway for school-written ones, did you?

I also dry the lingonberry leaf, send it to relatives in Dagestan and Ulyanovsk, and leave it for myself. And they collect (I read it for a long time) before flowering and after the berries ripen, when the leaves contain the most usefulness. But I don't like cranberries, although they always have them in the freezer. And my husband and son really respect compotes, a 3 liter can for the evening, I make 50 cans for the winter, it's enough.
Gaby
The girls, Lyudochka, took out raspberry leaves last night to defrost just on the table, and in the morning she came up, looked into the bag, and the leaves are all dark, as if fermented already.Did everyone have it or did they have to defrost it in the refrigerator? At first there was an idea to throw it away, and then I decided to try to do a little. I began to twist the sausages, and they were dry, I decided to moisten my hands with water, the leaves, as it were, were already fermented in color, immediately after twisting I cut them into washers. I'll leave it for 2-3 hours, maybe that's what happens. I thought that in any case, it will be better than nothing. I live in the city, I bring the leaves from the village, so it's a pity to throw it away right away, there is no way to pick others right away.
Linadoc
Olesya, sophora from the chocolate family (this includes cola and cocoa). You can do it from it.
Linadoc
VikaVikus, everything is fine, do it boldly. Sprinkle them with water and cover with a very damp cloth. And in general, it is better to twist raspberries with other leaves together, for example, with an apple or pear. Then they will not be so dry. Only the apple and pear must be dried first, and then add frozen raspberry leaves and scroll.
lappl1
Vika, everything is fine, do not worry! This in the freezer tore apart the cells of the leaves and they darkened from the juice that came out. This is exactly what we need. Now fermentation will go better. To do this, we freeze the leaves to facilitate the process of destruction of the leaf and the release of juice. So your tea should be cool. And you can ferment longer - up to 6 hours. If anything, be guided by the smell.

Olesya, just read this message (during the day). So for me, for example, this is the usual daily routine - before 2 am and do not go to bed ... And I have a counter question - and Che, are they selling notebook pens at this time?
Linadoc
And I made Isabella grapes, it's a pity that not enough. Such aromaaaat !!! I also added Jerusalem artichoke petals - beauty !!! I have this Jerusalem artichoke ... like shoe polish ... It's a pity, the educational and working process begins, you can only get to the dacha on Friday (3 hours, if you're lucky ...). And there are still so many things to redo ...

Returning to the issue of withering in fabric. Collection of strawberries + raspberries + apple tree. The leaves were wet, did not have time to dry completely, rolled into a sheet. Left for 18 hours. And these worms are solid on an electric meat grinder.

Omela, lovely worms!
I read and read you all. made some tea from black chokeberry, the smell after freezing was very strong, it smelled very much of almonds or bird cherry, after fermentation the smell decreased.I twisted it on a manual meat grinder easily, broke the electric one with these leaves, barely unrolled it then, everything clogged and coke as much. dried, the smell almost disappeared. I tried to brew it and asked myself a question - why didn't it brew with me and the water remained light, while your tea acquires the color of tea?
Omela
Oksana, thank you, the blackberry also did not "seem" to me, although the girls like it. I think it happened for me because of the long (11h) fermentation. But the color is there. and you only made of blackberry? I make mono-tea only from cherries, I mix the rest.

Fuh ... the topic was filling in faster than I could read, but I still got to the end)

lappl1, accept from me the enormous gratitude for your work in collecting and systematizing so much information! At the time to write, if not a textbook, then a manual for sure)
Thanks a lot to all tea makers for sharing your knowledge and helping newcomers like me.

Of course, I was familiar with this technology for making tea, but I only used it in fireweed, and there is little intelligible on the network for garden plants (well, I did not find it, at least). And here it IS! It's a pity that I started collecting leaves too late)

So far I have made a little bit of raspberries, currants, pears, cherries, strawberries and grapes. The next step is Village.
Of course, I am far from tens of liters ... But now, having found a new hobby, I realized why everyone makes a lot of tea: I want not only to drink it, but also to give it to everyone, give, give, give, and also make it try
In mono-teas, of course, cherries are beyond competition. I have not even tried grapes and currants yet.
In general, thank you all for such a detailed topic!
Bounty
Something with teas is still not working out for me. only blackberry and smelled. I also tried to twist the raspberries with the apple tree, it seems like I already smelled some kind of weakly pleasant smell, but I have no color in the brewed form anywhere. I collected strawberries with a leaf, froze them (I have a huge freezer), pulled them out, defrost them, just sat down to twist and the guests came. I had to postpone everything. while she was free, she stuck her nose into the bag, and there it was already smelling like a bath - threw it out.
