Fermented tea made from leaves of garden and wild plants (master class) (page 46)

Omela
No, well, a bag in the sense of a big package. She tore into bunches together with leaves, then separated the berries for an hour.)
lappl1
Ahhh! Clear! And I would not throw the leaves, and then put them in some tea.
Omela
That's what I wanted, but I say there are some defective ones, and they smell like beetles .. green ones, I don't know how they are called correctly, we call them an indecent word.)
lappl1
I know these obscene stinkers! I sometimes come across them on raspberries or currants (berries). Yes, with such beetles, tea can also turn out indecent ...
Omela
In-in. We caught two in the car on the way. Even napkins with alcohol did not kill the smell .. Brrr.)
lappl1
Ksyusha,
Omela
: Friends: I went to sleep .. I didn’t wait for a cat with a gulek, now it will cuckle on the street until morning.
lappl1
The cat will find where to spend the night. Mine all summer sleeps in the hay in the barn.
Good night, Ksyusha!
Elena Kadiewa
How good it is that I have you! I live in a dacha, next to my granny is a neighbor, well, sometimes guests from the city come, although I like to be alone, but there is not enough communication, and here you will climb in, and it's beauty! It’s as if you’re talking to everyone, you’ll get some advice, and most importantly, they are all unobtrusive, at any time you can get up and go do your business! Yesterday I was drying my fireweed tea, the smell did not inspire, or it was rustic, before that, fireweed smelled of flowers, another prune, but this one is somehow different, but not hay for sure! But I read that you can ferment for more than a day, so I kept it for a long time. Yesterday evening, I picked up currant and fireweed leaves, put them to dry, and then went for a walk with the child and found several Ivan tea bushes, very young, already sticky, there is almost no color. And here I look - I'm standing in a puddle, collecting a leaf, it is very fragile, everywhere there is water and a one-year-old (almost) shepherd dog rushes around in circles, that happy mother does not swear, she has no time, they came home dirty, but so happy! Let's go again today! The question is to wither the cherries and you can go through a meat grinder? And then I read here that it sticks. I'll go to the neighbors to rip off, what good to disappear, especially allowed. It's cold again here, 6-8 degrees, at the dacha you don't want to do anything, but there is something interesting to do. Yes, good morning girls! Come for breakfast.

Good morning, Lena! Most likely, you have over-fermented tea. But nothing, it will still be infused. So don't throw it away.

You do the cherry with something too. She needs very little. It makes any tea cherry in small quantities ... And it will stick to the meat grinder less.

In general, this is what I found about rudbeckia: So, we will not poison ourselves. You can still pick.
Whoa! There, not only we will not get poisoned, but on the contrary, this is an increase in immunity !! Only it is not necessary all the time, but in the period of colds and infections, I think that you can drink a course for 5-7-10 days. Now I will specifically go to look.
Mary Poppins
elena kadiewa, I just wrote yesterday that I re-fermented my tea from willow tea, I stood for about a day, but in a warm place. If in the cold, then fermentation can begin completely and immediately disappear. It is better to observe the required temperature, but too much time is not necessary either. My smell appeared not very good. But it's a pity to throw it away, I'll see what happens in six months.

If you do it with cherries, then you also do not need to ferment for a long time, no more than 6 hours, if longer, the smell may go away.I am like that with blackberry - after 3-5 hours it smelled amazingly, after 10-12 hours this amazing smell disappeared. Now I will wait, maybe it will be infused in a couple of months.
Elena Kadiewa
No, it has not been unambiguously re-fermented, now I smell a floral aroma, this is already with a dried one, it just seemed to me, probably, in comparison with the village one, I dried them almost in a row. I went to the bathhouse, turned the foliage, there is a young fireweed and smore. with fireweed, it does not dry well, it is very cold, I think it can heat a bath, it will be faster, but again, humidity. I wanted to pick for the village, but the dubak, already crawled under the covers, promise frosts.

Girls. This year I fermented tea with rowan cherry pear strawberry raspberry sage, added raspberry strawberry black currant berries. I mixed everything and forgot about him. Yesterday I found the package, opened it and gasped. The aroma is super. She assured me adding purchased tea Ivan. I am a lover of good tea. but I have never drunk this.
Elena Kadiewa
Elena, how did you do sage? Did you cut off the stems completely? His flowers are scanty.
Fofochka
AND THE LEAVES AND FLOWERS I FROZEN. THROUGH THE MEAT GRINDER. WITHDRAWAL FOR 12 HOURS ON THE STREET. (THE TEMPERATURE WAS ABOUT 30C) DRYED IN ISIDRI. I DID ALL THE LEAFLETS.
Fofochka
lappl1. LADY HONOR YOU. FOR THIS TOPIC. FOR THAT THOUGHT TO DO THE LEAF. BUT WE ALWAYS DRY THEM. AND THERE WAS NO SUCH FRAGRANCE.

Mary Poppins, which means I’ll go to my neighbor’s all to cut off. She gave me the go-ahead yesterday, and I was modest. Immunity must be maintained at the proper level.

Elena, Your messages are like a balm for the soul ... I am so pleased that your tea was a success and became a discovery! I am especially glad that you are a connoisseur of good tea, and this tea amazed you with its taste and aroma. Thank you for such a review!
So, we still have to make tea. There is still a lot of time - before the leaves fall.

elena kadiewa, so you do not give in to a steam, so there will be no moisture. And don't heat the bathhouse too much. The leaves will then dry well and fermentation will go better. Mary Poppins is right. Maybe yours is just cold and the tea is not fermented. Fermentation will not occur at temperatures below 15 *.

Small notes. Wools on mountain ash (black currant, raspberry ...) - green bugs, used to enhance immunity. Sage does not increase immunity, but is a strong natural antibiotic. For immunity, just Jerusalem artichoke and other sunflower seeds are suitable, as well as daisies, blueberries, eucalyptus ... And just in sooo little amount (homeopathic doses).
NaNya
OH, I have already made so many teas and raspberries, and pears, and strawberries, and currants. Now I am fermenting apricot. plans are still cherry, apple and plum)) Currant until temper. Most of all, I fermented it for sooo long, probably a day, I thought it wouldn't work, because it was ground in a meat grinder, it dried up quickly, the smell of course !!! in comparison with other teas, the taste is more pronounced. Thanks again!
francevna
The heat began to subside, such a beauty! This morning, for three whole hours, she sheared with scissors raspberries (700g), pear .2 varieties (270g), grapes -7 varieties (350g), weighed everything to know what the ratio would be. There has been no rain for a long time, the hands were black. so I washed everything, dried it and wrapped it in cloth for a day. In good weather, work is easy and joyful, and there is still a lot of work to be done.

Well, we will use just such doses.
Girls, gathered today to go for sunflower petals. And they are not! Yesterday were still, and today noooo! There was a strong wind and downpour at night. Even my little pepper greenhouse ripped from the ends. Well, and plucked the petals from the sunflowers. You should at least go for Jerusalem artichoke, if there is still anything left.

Alla, you probably have prickly raspberries? And in our garden, and the wild does not prick strongly. I just rip the leaves - I grab three leaves at the base of the cutting and cut them off. It turns out very quickly - a package of minutes for 20 ditch. But the rest of the plants are very slow to pick up. The trees are old (about 30 years old), tall, you can't jump to the leaves. Everything that could be cut off at the bottom has already been cut off, now you need to walk with the stairs to get the leaves.

Alla, congratulations on the good weather! Now you will turn around to the fullest ...
It's raining here ....

Elena, maybe we have different sage, my leaves don't have a stem and lilac nondescript flowers on it. It got warmer in the evening, as much as 9 degrees, went with the child to pick leaves for the village, wrapped in the woods, lingonberries ripen, collected half a liter, there are mushrooms, we have to take a walk tomorrow morning.
Linadoc
Lyuda, girls! Made a recipe cider... Tomorrow, if I have time, I'll make a champagne recipe.
francevna
Quote: lappl1
Alla, you probably have prickly raspberries?
Lyuda, raspberries are prickly, it's hard to tear with your hands. I cut off the pear from the stool, there are many spoiled leaves, you have to choose for a long time. I hope for "elite" tea.

Elena, and we got colder, in the morning it was +20, on the street lasted until twelve. In the shade it was +28, and in the sun +40. I hope that tomorrow morning I will pick quince and plum leaves.
Mary Poppins
lappl1, I am sorry that I said the idea late and you were left without sunflower leaves. But since Jerusalem artichoke and other yellow flowers are also from the sunflower family, then of course, it will not be worse with them.

I myself am already looking at all these flowers)) I did not distinguish at all before, now I go and look at the middle))

LinadocThank you very much for the work done! I'm going to write it down, this year I won't do it, I don't have time anymore, soon we will have a large resettlement of the whole family from the dacha home.

I cut the pear off the stool
And I'm from the stairs ... The leaves of the pear are so small, they tear hard and for a long time! And now my husband took the stepladder for himself to repair the house. It is heavy, metal, you can't drag it from garden to house. I'll wait while he gives it to me. So at least I was lucky with raspberries. But the rains slow down the process again ...

Mary Poppins, nothing wrong! On Jerusalem artichoke and dahlias ...

Linochka, thank you very much ! I followed the link. The recipe is awesome! Only I asked you a bunch of questions there ...

Oh, tovarischi! I messed up something with strawberry tea! For some reason, I have it with an obvious bitterness. Withered, twisted perfectly, praised him for it, because I twist everything on handmade meat, I really liked the smell of the twisted one, it smelled like a green apple. Not overdried, and now.
lappl1
LenaI don't even know why it happened. This is the first time I've heard about strawberry. If you spoiled it during fermentation, it would be tasteless and odorless at all. Maybe you made it too cool? When did you make this tea? Maybe he'll get better?

And I'm off the stairs ...
I was lucky with the apple tree - I had to cut the branches from the Chinese apple tree, and so the leaves did not go to waste, I collected them, and even with comfort ...
I regret that I went late to look at the thorn-aphid ahead of me, did not leave a single clean leaf. But I collected the leaves of the red-fruited bird cherry, it grows next to the fence, and did not plan in advance, it happened so spontaneously, it ferments.
Lyudmila, thank you for your work. So interestingly and lovingly we described tea - this is a discovery for me and an occupation for the whole summer.
She made currants, apple trees, irga, cherries, raspberries, garden strawberries, cherry plums.
True for myself, I chose the technology with a freezer and leaf tea - we live in the country house, there is no meat grinder here, and the freezer and scissors are always at hand. Dry in Isidri. We will also find a place for tea ...
The question arose about cherry plum, the leaves after the freezer crumbled very much and the pieces stuck to the hands, maybe it should be dried beforehand? I immediately put it in the freezer, then warmed it up in the room and began to twist.
Linadoc
Lyuda, girls! I made a recipe apple champagne... It is also still cloudy, it has not reached, only next week I will bottle it in bottles. Look how it is already "playing", seen on the surface of the glass.
Henbane
Lyud, too, thought that she brewed it cool, but even in a strong dilution there is bitterness. I did it yesterday. Now they came from my birthday, drank store tea, strong brewed, well, very much like mine. Can he get better?

Marinahow much you have already done! And the technology is normal. Everyone chooses what is more convenient for him or more. This is just the beginning. Maybe next year you will also make granulated tea.

I didn't make cherry plum - it doesn't grow here with us. I don’t remember who did it. Maybe this is the peculiarity of the sheet? Currants and raspberries also crumble, so don't do it. The only way out with them is to twist in a meat grinder with relatively neutral leaves (apple, for example). Try Rustic cherry plum tea. Any combination is good. The more plants the better.
And, of course, try wilting the leaves first. Traditional tea is never made without withering. We are here to arbitrate, skipping the withering process.

Lena, well, you see, your tea looks like a store one! And when the tea is aged, its flavor and aroma characteristics are enhanced. So I don't know what will happen to yours.
Lena. I'm doing lecho now. I twisted hot pepper in a meat grinder (not tea). And I thought - maybe you twisted something like that in a meat grinder in front of the leaves? From pepper, for example, bitterness literally eats into all the details ...
Henbane
Her. Rustic twisted before. Luda, thank you very much for your attention and care.

Marina, I was making cherry plum. After freezing, I keep the leaf in a bag for a very long time, it warms up, begins to sweat, and a fruity aroma appears. I only make loose leaf tea, my leaf did not break.
lappl1
Alla, exactly! I remembered that you did the cherry plum! You won't remember all at once ... It's time to update the links.

Alla, the process is the same as mine. Maybe we have such delicate leaves from cherry plums or collected at the wrong time (the humidity in the air was high due to frequent rains)
Lyudmila recommends not to skip withering, if I have time, I will try again ...
lappl1
Marinawithering is good! But our hands are not as strong as the rollers on the leaf rolling machines in the tea factory. Therefore, freezing was invented, which well destroys leaf cells. And then the sheet curls easier. Alla wrote that she warms the leaves well in the bag. And already there the process of fermentation begins (its sign is the appearance of a pleasant fruity smell). In addition, the leaves become softer in the bag. If you did the same, but the leaf still collapses, then it makes sense to wither.
marina-mm
Ludmila, thank you for your attention I agree with you, we need to improve the process
