Cherry ice cream with Mascarpone (Brand 3812 ice cream maker)

Ingredients

Cream 10% (choose fat content to taste) 300 ml + 2 tbsp. l.
Milk 3.5% 200 ml
Mascarpone 250 gr.
Granulated sugar 175 g
Vanillin on the tip of a knife
Cherry (I have ice cream) 2 tbsp. (~ 250 g.)
Cherry juice 50 ml
Corn starch 1 tbsp. l.
Salt pinch

Cooking method

  • Stage 1:
  • In a saucepan, heat the cream (300 ml) with sugar and vanilla until the sugar dissolves. Bring to a boil and reduce heat.
  • Stir constantly, add cornstarch, stir thoroughly. This is the recommendation of the author of the recipe. But doing so, I got a cream with lumps of starch, which did not want to break into any, as I did not beat with a whisk. I had to strain the cream through a fine sieve, heat it up again and dilute the starch with two tablespoons of cold cream, add it into the mixture. Therefore, this stage is crossed out in the photo.
  • Let the "jelly" warm up for a couple of minutes, until it thickens and remove it from the heat. Cool down.

  • Stage 2:
  • Place milk, 1 cup cherries, cherry juice, mascarpone and salt in a blender bowl. Beat until smooth. The mixture can be kept in the refrigerator.
  • I defrosted 1 glass of cherries in the microwave. And together with the released juice, she placed it in a bowl for beating.

  • Stage 3:
  • Add the mixture of mascarpone and berries to the cold creamy "jelly", beat with a whisk to mix well.
  • Pour the prepared mixture into the ice cream bucket. Cook on Ice Cream mode.
  • 20 minutes before the end of the program (and my scapula stopped at 58 minutes), grind 1 glass of frozen cherries in a blender bowl (3 clicks on "Pulse") and add to the mixture in an ice cream maker through the window for additives.
  • Transfer the finished ice cream to a freezer container and freeze in the freezer to the desired consistency. Immediately after cooking, half of the mixture remains soft, and half is quite frozen.

  • Serve ice cream in bowls with additives to taste.
