Vanilla ice cream with strawberry jam (Brand 3812 ice cream maker)

Ingredients

Ice cream:
milk 500 ml
cream 20% 200 g
egg yolks 4 things
sugar 130 g
vanilla sugar 10 g
Confiture:
strawberries (frozen) 300 g
granulated sugar 150 g
jaundice (2: 1 or 3: 1) 1 tbsp. l

Cooking method

  • Ice cream:
  • In a saucepan, combine milk, half sugar and vanilla. Boil.
  • Beat the yolks with the remaining sugar in a light foam in a separate bowl.
  • While whisking, add half of the hot milk to the yolks.
  • Pour the mixture back into the saucepan and heat. Boil until light (!) Thickening over very low heat, stirring all the time and making sure that the yolks do not curl.
  • Transfer the cream to a glass bowl, tighten the top with cling film so that it touches the surface of the cream. Cool to room temperature.
  • Add cream, stir and pour the mixture into a glass of ice cream maker.
  • Freeze for about 45-50 minutes, until the scapula stops.

  • (my shoulder blade stopped at -07 C)
  • Confiture:
  • Defrost the strawberries and chop with a blender, leaving a few whole pieces of berries. Transfer to a saucepan and bring to a boil.
  • Mix the gelatin with sugar, add to the berries and boil for 3-4 minutes, stirring occasionally. Cool completely.
  • Transfer the finished ice cream to a storage container, add the jam and mix.

Ice cream (immediately from the ice cream maker) turns out to be soft, it is inconvenient to "twist" the balls. Next time I'll get a little bit cold.

I'm afraid the jam will almost dissolve in the ice cream when mixed. It will certainly be tasty, but the "streakiness" will disappear.

jelly was made from mandarin duck with the addition of sugar and agar agar. Thanks for the recipe, it turned out very tasty ice cream.

I'm a fan of yours, recipes are always clear. Great, thanks. I made it yesterday, today they ate it with pleasure, I just cooked the jam on pectin in terms of my weight, mashed potatoes, I have raspberries, red currants. That's perfect for a sweet ice cream. The eggs really steamed for a long time, they did not want to thicken in any way.
Zhelfix with a preservative comes, but why is it for children.
