Cooking method

  • I have long wanted to try to make something like boiled-smoked pork at home. And then a piece of meat came across a suitable one, but looking at it doubts arose about its sufficient juiciness. Therefore, the idea arose to first smoke this piece until half cooked, and then cook it up.
  • Having discovered a beautiful result of smoking, it became a pity to bring it to readiness directly in water, so it was decided to use the steam cooking method in a pressure cooker.
  • It turned out very tasty, juicy meat with a slightly smoked aroma and taste, reminiscent of both boiled pork and ham at the same time! Well, very tasty! Let's repeat from other parts of the pork carcass!
  • - Rinse a piece of pork and put it in brine (1 liter of water, 2 tablespoons of top salt, crushed garlic, a broken bay leaf - 2 pcs., Allspice - 5 pcs. And your favorite grill mixture - 1 h. L), leave to marinate in the refrigerator for at least a day.
  • - Pull the pork out of the brine, dry it, add salt if necessary, put it on the grill of the smokehouse, put a few cherry (plum) branches and a handful of alder chips on the bottom, add 100 ml of plain water there and put it to smoke over almost burnt coals. This process took us a little over an hour. The meat was brought to a temperature of 65 grams inside the piece. After that, the meat was taken out of the smokehouse. This is how it looked:

  • - Then the meat was put on the wire rack in the Oursson multi-cooker, poured water on the bottom and brought to readiness on the "Steam" program under pressure, setting the cooking time to 30 minutes.
  • - At the end, pull out the meat, check the temperature - it showed 80 degrees exactly (it's surprising that the time chosen at random came up!). The piece must be tightly wrapped in foil and left to ripen in the refrigerator until morning! Can be served immediately as a hot dish
  • There were enough people who wanted to pinch off a piece right away!
