Bread Two milk

Ingredients

water 175 ml.
pressed yeast 8 gr.
salt 1 tsp

wheat flour 1 grade 240 gr.
milk 110 ml.
honey 25 gr.
salt 0.5 tsp
powdered milk 30 gr.
vegetable oil 20 gr.

Cooking method

  • Mix all the ingredients for the dough (I did it in cotton) and leave to ferment for 3 hours.
  • Sift the remaining flour into a cotton bucket, add salt. I put everything else in milk: honey, milk powder, vegetable oil I mix until the honey dissolves and everything in cotton for kneading. I knead on the "dumplings" mode. The gingerbread man turns out to be soft, but it keeps its "shape".
  • Then the rise (it took me 1h 15min.)
  • Then I rolled the dough into a "ball", immediately put it in the mold and left it under the lid for another hour.
  • Before baking, I made one longitudinal cut and baked with convection and steam for 25 minutes at a temperature of 200 degrees, and then lowered the temperature to 170 degrees and another 15 minutes.
  • The crumb is moderately tender, the crust is thin, the aroma is creamy honey.
