Ingredients

Dough:
Old dough 200 g
Water 300 ml
Flour / s 200 g
Sugar 1 tsp
The rest of the ingredients:
Flour / s 210 g
Whole grain flour 150 g
Salt 1 tsp
Powdered milk 2 tbsp
Sunflower oil 1 tbsp
Truffle oil 1 1/2 tbsp
Pressed yeast 4 g

Cooking method

  • I continue to experiment with the test. The dough is very old. Was in the refrigerator for 1 month. It didn't deteriorate. Prepared dough in the Multi-blender Proficuk. Kneading the dough in HP. And baked in the Shteba pressure cooker.
  • 1. Prepare the dough. Pour water into a blender, heat a little - it should be warm, literally 1 minute. Add old dough - mix until smooth. Add yeast and sugar - stir. Add flour. Beat with a blender. Leave until mass gain (about 30-40 minutes)
  • 2. Pour sunflower and truffle oil into the CP. Then add the dough and the rest of the ingredients. Install the Main Program. After kneading, before the second proofing, I put the dough in the MV and gave time to come up for an hour.
  • 3. Baking on the frying program for 20 minutes and on the second side for 10 minutes.

Truffle oil gives a very pleasant aroma to bread. Although, when it is in a bottle, very concentrated, it does not smell very pleasant. And adding just a little to bread or pasta, it adds piquancy.

I use truffle oil quite often. One and a half tablespoons for this amount of dough will be too much. The smell will be very specific.
According to my personal experience and the recommendations of specialists, it is better not to subject it to heat treatment.

I will not argue with you! The oil is actually specific! I did it on 1 spoon, but there is no smell, it only smells like bread, and 2 spoons are already a lot - a bit harsh, and 1 1/2 is optimal! But this, again, is not for everybody!
What is the risk of using oil after heat treatment? Maybe sometimes for a change and not scary!

Mar_k, a matter of taste! Try already baked bread on top, just anoint it with a small, about half a teaspoon, butter.
And compare the taste. There will be a difference.
I add 3-4 drops of oil per kilo of potatoes to mashed potatoes (already prepared), to rice, to pasta, to sauces for salads. Also a few drops.
Eating oil after cooking? Not fraught with anything. It's just that the smell for which this oil is bought will not be so bright.
