String beans (green lobio) with eggs

Ingredients

Green beans 500 g
Onion 2 pcs.
Oil drain. 100 g
Eggs 3 pcs.
Garlic 1 clove
Parsley, cilantro, basil
Salt, black pepper (or red) taste

Cooking method

  • Wash the green beans, remove the tails and break them into pieces of about 3 cm (I have ice cream here from the bag). Put the beans in a saucepan and cover with water so that it does not cover the beans and cook. Salt. Simmer until tender over low heat.
  • Saute the onions in butter (I cooked in a mixture of refined sunflower and butter) until slightly ruddy. Wash greens and chop finely. Beat eggs lightly with a fork on a plate. Then add browned onions, herbs, chopped garlic zebra, spices to a saucepan with beans, pour eggs and mix quickly.
  • Keep on low heat for another 5 minutes. The whole dish is ready!
  • The beans must be juicy, that is, some of the water will boil away, and the broth that
  • remains will add juiciness to the dish. That is, scrambled eggs should not turn out.
  • P.S. I also add a mixture of utsho-suneli seasoning. I buy in the market on trays of loose spices, but it's also delicious without it.
  • I have frozen greens (my workpiece).

Remember, in the fall I asked you if it was possible to freeze the blue ones for this dish, and I did freeze 1 peeled piece for testing. And that's how I wanted to make this dish - I realized that I have all the products, I brought in some more gag, boiled some meat and threw it when I put it to stew. In general, the class has its own frozen greens, its own frozen tomatoes, and how the skin is quickly peeled off from them, and here are my impressions the eggplant tasted excellent, in general, the taste of the dish was the same as in the fall from fresh ingredients. I will freeze my conclusion for this dish, but it is possible to cook without eggplant now it dawned on me only when I ate it, that this is RAGU, it is the herbs that give this dish a unique taste.

Svetl @ nka , I think you can, but if these beans are not very sour, made in the manner of pasteurized in a slightly acidified marinade. Otherwise it will not be tasty.
