Lobio or beans in Georgian (with nuts)

Ingredients

Dry beans 1 tbsp.
Bulb 1 large
Peeled nuts 1/3 Art.
Parsley, cilantro,
can you basil
3 branches each
Garlic 1 clove
Vinegar
Salt, red pepper
Rast. oil

Cooking method

  • It is better to take "colored" beans for this dish, but it will also turn out tasty from white beans. Most importantly, it should be thin-skinned (I always ask sellers).
  • Soak the beans overnight, drain the water and cook. After 5-10 minutes of boiling, drain the water, pour in fresh water so that the beans are covered by about 2 fingers. I do this in order to remove (reduce) the side effect of eating legumes.
  • Finely chop the onion and sauté in oil until slightly golden brown.
  • Grind the nuts, add finely chopped (crushed) garlic, a little wine (apple) vinegar, salt, pepper to them and grind well.
  • When the beans are cooked, pour the broth into a separate bowl (useful), mash the beans with a crush, add browned onions, nut dressing, mix and dilute with the broth until the consistency of sour cream.
  • Put on low heat, season with finely chopped herbs, bring to a boil. Taste for salt. The dish will definitely thicken after cooling.
  • Everything, the dish is ready!
  • Beans can be cooked without nuts. The cooking method is the same.
  • The beans may not be mashed.

Note

Lobio is a tasty and satisfying snack (snack). It is good hot, and especially cold as an independent dish and as a pasta for sandwiches. By the way, "khachapuri" is made from lobio - they are called lobiani
