The bread seems to have exploded from the inside, although it tastes great and is baked inside.

I tried to change flour, yeast, add less water, I always follow the kneading, the bun turns out to be normal, but the bread always comes out so cracked, tell me what else you can try?

For the report - I did it in 2511, but according to my instructions, 2 tsp. (of which one and a half were Ashanov's, and 0.5 was the SAF moment), and I added 2 tsp each. agram light and panifarin. I used to do it without agram-panifarin, it turned out not so lush, but it was also not bad and very good. Today's taste is almost the same, both from the original recipe, and from the version with the addition of 2 tsp. apple cider vinegar.

PS Ha, I even have a wooden stand like the author of the post. Who does not get this bread - maybe that's the case?

I made strictly according to the recipe, only 2 tablespoons of yeast, and on my own added half a spoonful of lemon juice, program 09, a scoop for rye, it turned out SUPER, the crust crunches, I really liked it.
