Ingredients

Wheat flour 75 gr.
Cocoa 10-12 gr.
Egg yolk 3 pcs.
Egg 4 things.
Powdered sugar 55 gr.
Water 60 ml.
Vegetable oil 40 ml.
Cream
Butter 70 gr.
Condensed milk 4 tbsp. l.
Lemon sugar 3 tsp
Coconut flakes 50-60 gr.

Cooking method

  • Sift cocoa and flour, cocoa 2-3 times, until the lumps disappear. Set aside 10 g. flour and combine with cocoa. Prepare baking paper, 3 sheets. Grease one sheet with vegetable oil and put on a baking sheet.
  • Beat three egg yolks with a whisk, add 35 gr. icing sugar, mix. Add water and vegetable oil. Stir, add flour. Mix.

  • Take 4 eggs. Separate the yolks. Put the whites in the refrigerator and beat the yolks.
  • Then beat the whites until stable peaks, gradually add 20 grams to them. powdered sugar. Put a third of the proteins to the yolks, mix and combine with the flour mixture, stir. Combine with whipped egg whites. Put 2-3 tablespoons in a cornet and put dough circles on a baking sheet, on tracing paper, making a second row of circles in the middle of the first.

  • Put in the oven, make sure that the dough is tightened on top, but not hardened.
  • Pour cocoa into the remaining dough and stir well. Smear the coffee dough over the circles and bake for another 10 minutes at 180 gr. FROM.
  • Check the readiness of the biscuit spread with a wooden stick. The main thing is not to dry it out

  • Put a board, clean paper on it and turn the finished biscuit from the baking sheet onto it. Carefully remove the paper it was baked on. Turn again on another sheet, circles down. Hot, roll up with paper.

  • While it cools down make a cream. Beat butter (room temperature) until fluffy. Add condensed milk, lemon sugar and beat together again. I made lemon sugar according to Qween's recipe, for which many thanks to her.

  • When the roll has cooled, unfold it, grease with cream, sprinkle with coconut if desired.

Note

I take coconut flakes from Uzbeks in the market, they are small and quite soft. The roll is very tender, baked several times and spreading the dough thicker and thinner. It is removed from the sheet well.
