Poppy seed cake with a twist

Ingredients

flour 100 g
almonds (peeled almonds) 100 g
poppy 70 g
eggs (large) 3 pcs
butter 120 g
sugar 100 g
powdered sugar 30 g
raisins 100 g
vanilla sugar 0.5 h l
baking powder 1 tsp
rum or cognac 2 tbsp

Cooking method

  • 1. Pour boiling water over the raisins and let them swell, then squeeze and dry thoroughly with a paper towel.
  • 2. Chop the almonds as small as possible, mix with the icing sugar and whites and beat with an immersion blender until smooth.

  • 3. Mix flour with poppy seeds, baking powder and vanilla sugar. Beat the softened butter with sugar, add the yolks and beat everything together. Add almond-protein mixture and beat together again.

  • 4. In several steps, add a mixture of dry ingredients to the dough, then add rum and raisins and mix gently.

  • 5. Put the finished dough into a greased multicooker bowl. Switch on the "BAKING" mode, time 1 h 10 min. Sprinkle the finished cake with almonds mixed with sugar and grill for 3-5 minutes.

The cake was baked well, it turned out absolutely not wet. For those who love "poppy crunch" in such baking, I would suggest baking this pie in the oven. Here the poppy is completely steamed and reveals its aroma, and the cake is the most tender. It is especially good (in my opinion) even a little warm.

But this one, in my opinion, can be done without fear. Mine liked it even more than from the oven. And it turned out not wet at all. Try it, I hope you won't regret it.
