Ingredients

Dough:
Wheat flour sun 300 g
Water 200 g
Pressed yeast 5 g
Dough:

Cooking method

  • For dough, heat the water to 37C. Dissolve yeast, add flour, knead the dough. Cover and leave at 30C for 2-2.5 hours. During this time, the dough should rise and begin to fall off.
  • For the dough, add 50 g of water, the remaining flour, salt, sugar to the dough, mix at low speed for 2 minutes.
  • Add oil, knead until smooth for 7 minutes on high speed. I kneaded in Thermomix, Spikelet mode. Add water if necessary. I added another 20 g.
  • Fold the dough in an envelope, place in a greased container and leave for 50 minutes at 30C.
  • Then knead the dough, fold in an envelope and leave for another 50 minutes. Then repeat the folding procedure and leave the dough for another 50 minutes. In total, the dough fermentation time is 2.5 hours.
  • Then knead the dough. Round off and leave for 10 minutes. In the original recipe, buns are baked, I have a small oven, so it is difficult to put the buns, so I baked with one large bun.
  • Next, form a bun, place in a proofing basket with the seam up, cover and leave for 1h 10min - 1h 30min. at 30C.
  • Heat the oven with a stone to 250C.
  • Before baking, make one incision at an angle of 25 °. Sprinkle with water.
  • Bake the first 10 minutes at 250C, then lower the temperature to 200C and bake until tender. The exact time depends on your oven. It took me 30 minutes. Ready bread, when tapped on the bottom, emits a dull sound.
  • Cool on a wire rack without a towel.

  • Of course, this bread takes a long time, and it is not for every day, but the result is worth it. Already during baking, the aroma was such that it was difficult to wait until ready. And then it is even more difficult - cooling. The bread has the most delicate crumb with a creamy taste and aroma. We love this !!!!!!! Although the scallop did not work out right.
  • As for the scallop, Ekaterina (kavolekat) gave some advice, for which she thanks a lot:
  • 1. Do not spray with water, the surface of the workpiece should be slightly drier - then there will be a "contrast" between the fried crust and the crumb growing from the inside, the bread will open strongly along the cut and the visor will protrude.
  • 2. Proofing should be less, until the volume of the workpiece is doubled.
  • 3. And when molding, the gluten must be pulled tighter so that the elastic ball turns out, but does not break.
