Sverdlovsk buns

Ingredients

flour 230
dry yeast 1 tsp
salt 1/2 tsp
egg 1 PC
milk 75ml
water 50ml
sugar 1 tbsp. l.
draining. interlayer oil 60g
sugar for the layer 2 tbsp. l.
draining. crumb oil 1 tbsp. l.
sugar for crumbs 1 tbsp. l.
flour for crumbs 1.5 tbsp. l
egg yolk 1

Cooking method

  • 1. Dissolve yeast in a warm mixture of milk and water with added sugar.
  • 2. Add the egg and sifted flour with salt
  • 3. Knead the sticky dough.
  • 4. Cover and leave to come up for 1.5 hours.
  • 5. On the floured surface, roll out into a rectangle 2 cm thick, grease 2/3 with half the butter and sprinkle with 1 liter of sugar, fold the unlubricated third onto the greased one, and another third on top (a flaky strip is obtained).
  • 6. Lubricate half of it with oil and sprinkle with sugar and fold it in half again (now we have a plump square), pinch all the seams and put it in the refrigerator for 30 minutes.
  • 7. Repeat the folding and smearing procedure again with the remaining sugar and butter.
  • 8. Roll out the dough into a layer 1 cm thick, cut into squares with a side of 10 cm. Roll each one into a square and put it on a baking sheet, let it rise for another hour, grease it with yolk.
  • 9. Mix ingredients for crumbs, sprinkle on buns and bake at 200 for 15 minutes.
