Ingredients

Wheat flour 225 g
Rye flour 325 g
Low fat kefir 350 ml
Salt 1.5 tsp.
Honey (I took molasses) 1 tbsp. l.
Vegetable oil 2 tbsp. l.
Yeast 2 tsp
Rye malt 3 tbsp. l.
Boiling water for malt 80 ml
Agram 1 tsp
Panifarin 2 tsp
Dark raisins

Cooking method

  • Pour boiling water over the malt, stir and cool.
  • Sprinkle yeast at the bottom of the bread maker's bucket,
  • sift flour on top, add other ingredients, last but not least, brewed malt and kefir.

  • I followed the kolobok, as kefir seemed to me thick. At first I added kefir a little, then added Art. l. flour. As a result, I pulled out a bun and understood in my hands. that he is. I put it back, did not take out the scapula and left it to rise.

  • 1. Program basic fast 20 min. Kneading and lifting 50 min. Then we forcibly turn it off and let it rise with the lid closed for another 1 hour 30 minutes.

  • 2. Turn on the baking program and bake for 1 hour 05 minutes.

  • The result is a tall bread - 12 cm. The roof is flat.

It tastes different from simple rye custard. and all the differences, instead of water - kefir, though I poured it 200, and up to 350 topped up with BROKEN MILK ..... the aroma of milk is very noticeable .... I advise!

And, I haven't put raisins yet .... I did it with bacon

I did it with raisins and Fitness mix, the taste is different. But with raisins I like it better.

And I made this bread with dried cranberries. I liked it very much! And instead of kefir, I added whey. I can't compare - I haven't done it with kefir yet, but mine turned out to be very tall and beautiful.
