Vegetable stew Summer

Ingredients

Eggplant 2-3 pcs
Zucchini 2-3 pcs
Sweet bell pepper 2 pcs
Carrot 2 pcs
Onion 3 pcs
Tomatoes 2 pcs
Garlic 1 head
Vinegar 2 tbsp. l.
Salt, pepper, rust oil taste
Tomato paste 1 tbsp. l.
Bitter pepper 0.5 pod

Cooking method

  • Cut the eggplants, zucchini, carrots and peppers into large cubes.
  • Cut onions and tomatoes into semicircles. Squeeze the garlic through a press press.
  • Pour oil into a saucepan and lightly fry the eggplants and zucchini in it, add all the other vegetables, salt and pepper, add tomato paste, stir and cover.
  • Simmer over low heat until tender for 40 minutes.
