Viennese pie

Ingredients

Wheat flour 480 g
Milk 250 g
Sugar 50 g
Butter or margarine 300 g
Yeast
(I took 25 g fresh and 1 teaspoon dry active)
65 g
Egg 1 PC.
I added 2 tsp. orange peel
There is no salt in the recipe,
I added 0.5 tsp. large marine
and a little vanilla.

Cooking method

  • Mix the flour and sugar, dilute the yeast in cold milk, beat the egg, place the ingredients in the bucket of the bread machine and turn on the dough mode (I have a 20-minute batch). Remove the dough immediately after kneading and roll it into a rectangle 1 cm thick. and spread 2/3 of this dough sheet with butter, spreading it evenly over the entire surface, then fold the whole sheet so that the buttered part overlaps with the unlubricated part (one third).
  • After that, very carefully roll out, spread, fold again and do so three times with small, 3-4 minutes, breaks between rolling.
  • After the 3rd rolling (the most careful one) grease with jam, sprinkle with raisins or grease with poppy-sugar mixture and roll up.
  • The dough rolled into a roll, not allowing it to come up, place immediately in a medium-heated oven (I set it 200 degrees 40 minutes), pinching the edges so that the oil does not leak.
  • Brush the top with whipped yolk.
  • I did not succeed in minimizing so that the oil did not leak out at all, maybe someone will be more secure.
  • In general, it is very fast and tasty.
