Ingredients

cottage cheese 500gr.
eggs 2 pcs.
sugar 1/2 cup
semolina 4st. l.
sour cream 1 st. l.
lemon zest 1h l.
dried apricots 5-6pcs.
baking powder 1 / 3h. l.
salt taste
vanillin taste

Cooking method

  • Grind cottage cheese with sugar and yolks (I did all this in a food processor to break the cottage cheese until smooth and soft), add semolina, lemon zest, baking powder, salt, vanilla, dried apricots. Beat the whites separately, add carefully to the cottage cheese, mix, leave to stand for 5-7 minutes. Put in a mold greased with oil and lightly sprinkled with semolina. Grease on top with a thin floem of sour cream.
  • The last time I did it in a silicone mold without smearing and sprinkling with semolina, everything came off remarkably.
  • For a long time I was looking for a recipe for cottage cheese casserole, I didn’t like all of it, now liquid, then solid and all the time "heavy". And a couple of years ago I found it, unfortunately I don't remember where, so I can't give a link, but I want to share the recipe itself, it's very tasty.

I use a knife in the cottage cheese processor.
I bake at 180 degrees until browning and can be checked with a splinter. Usually I baked in a simple detachable form for 20-30 minutes, and this time in silicone and cottage cheese it turned out to be a double portion, so it baked longer, and the form is tall, but narrowish, so it even baked a little from below, but still very tasty.

I tried your recipe. I would like to clarify - is a tablespoon of semolina a spoon like for a bread machine (under the knife) or an ordinary spoon with a slide on top? I put it as usual and it turned out harsh - a lot of semolina.

Before the bread maker appeared, it took semolina an ordinary spoon, but without the top. Now I look at the cottage cheese, if it is very liquid, then a little with a slide, but mostly a spoon from a bread machine, under the knife.
The casserole should be soft, even slightly airy, maybe due to whipped separately whites, I mix them very carefully and slowly.

Moreover, in general, she followed the path of least resistance, did not beat any proteins, but simply loaded everything together into a bowl and grind it with a Brown blender, only left it for 30 minutes, so that the semolina swelled a little and put soda at the end instead of baking powder, and candied apricots replaced dried apricots and zest lemon.
I baked in the Liberty pressure cooker for 30 minutes on Baking, then left 15 minutes on the heating, and voila
