Cooking method

In the middle of the flour, yeast. "Whole grain bread" program, weight 1000g, medium crust. Time 3h 30min. with 3 batches, 2 lifts. I baked a small (half) dose of 150g of wheat flour. The gingerbread man formed immediately, even seemed a little strong, but resisted topping up. When mixing, everything became the norm. The finished bread has a beautiful, even dome.
