Ingredients

Almond flakes (or peeled or coarsely chopped almonds) 45 g
Sugar 120 g
Water 35 g

Cooking method

  • Roasted nuts, nut mixture, filled with sugar syrup, roasted nuts familiar from childhood, "son" of hard halva. It was from this recipe that the roasted mass was once obtained.
  • Grillage (fr. Grillage) is a French dessert made from roasted nuts with sugar. Confectioners classify roasted nuts as caramel-type sweets, dividing it into hard and soft. The roast mass is obtained by melting sugar or sugar-honey syrup and adding nut kernels to it. In order to obtain high quality roasted nuts, it is important that the initial sugar substance is transparent and the nuts are evenly roasted. Fruit roasted nuts are obtained by boiling a fruit-sugar mixture and adding nut kernels to it. The mass fraction of moisture in such roasted nuts is no more than 8-10%.
  • Real roasted nuts must comply with the following consumer properties: do not get stuck in the teeth, do not taste bitter, without foreign tastes. The most "convenient" for the consumer roasted nuts are thin, hand-rolled. So:
  • Lightly fry the almond flakes and sift through a sieve to remove the fine crumbs.
  • Stir the sugar and water well and cook over low heat, stirring constantly.
  • Cook the caramel until a soft ball. The readiness of the caramel can be checked by dipping a couple of drops into a glass of cold water or dropping onto a cold plate. The approximate cooking time for caramel is 5-7 minutes.
  • When the caramel acquires its characteristic golden color, pour the almonds heated in the microwave into it and stir well.
  • Quickly remove heat and pour onto baking paper oiled with odorless vegetable oil. Allow to cool completely.
  • Break it into pieces. Can be used for making pralines, creams and decorating cakes and rolls,
  • for example, as in cake "Athens"

  • Or you can just turn your head around, because properly prepared roasted nuts are fragile, crispy and very tasty.
  • From this amount of products, 150 gr is obtained. ready-made roasted nuts.
  • Store in a tightly closed container in a cool dry place, I, however, do not live up to this stage!

I did not understand how small crumbs would interfere with roasted nuts.
When I made the roasted nuts, when the nuts were poured into the syrup, the sugar happily crystallized, so I had to reheat the mass and add lemon juice to it.
