Almond yeast cake from Uncle Owl in a bread maker

Ingredients

milk 150 ml
chicken egg yolk 3 pcs
butter 1 pack (200 g)
salt 1 tsp
sugar 90 g
white wheat flour 530 g
dry yeast 3 tsp
whole almonds 50 g
raisins 80-100 g

Cooking method

  • Timing:
  • 1st batch - 10 minutes, rest - 5 minutes, 2nd batch - 18 minutes, 1st rise - 70 minutes, 3rd batch - 2 minutes, 2nd rise - 1 hour 30 minutes, baking - 1 hour 05 minutes.
  • Be sure to monitor the formation of the kolobok, correct if necessary! Whole almonds and raisins should be added 5 minutes before the end of the 2nd batch, i.e. 28 minutes after the start of the whole process.
  • Note 1. It turns out that you need to choose a light crust - I chose a dark one, it turned out a little dark, but still tasty (see photo).
  • Note 2. Owners of the Moulinex OW 5002 can start program 4, but the last rise is 60 minutes, you have to turn it off, wait an additional 30 minutes and then start program 14 "bake" for 1 hour 05 minutes.
  • Lightly sprinkle the finished cake on top with a mixture of cinnamon and powdered sugar.
  • raisins can be covered 50 x 50 with candied fruits, while leaving the number of almonds unchanged.
  • this recipe is from a book for a bread maker, only I modernized it - a) replaced eggs with yolks; b) increased the amount of milk accordingly; c) reduced the amount of yeast by 0.5 tsp; d) accordingly, it was necessary to increase the time of the last ascent from 1 hour to 1.5 hours.

I got not a cake, but a giant cake, which rested against the lid. The recipe followed gram to gram, only peeled the nuts, dried in the microwave and chopped into large pieces, added candied fruits and dried cranberries instead of raisins. For Panasonic: program DIET, size L. Put nuts in the batch, and candied fruits and cranberries in the dispenser. Very tasty. Maybe 3 tsp of yeast is too much?

I am very glad that you tried the recipe from "Uncle Owl" and that you liked the cupcake! I hope, and outwardly it turned out that it is necessary - the roof did not collapse? Regarding the fact that "the cake rested on the lid" - my bread maker bakes products of the "brick" shape (which I really like), and yours - the "cake" shape, that's why it rested. I have the same recipe for a size of 1,500 g, so it turns out really giant!

Regarding the yeast: in fact, the original recipe indicated as many as 3.5 tsp. dry yeast. I even reduced it a little - to 3, because I replaced the eggs with yolks (I slightly increased the amount of milk).

Next time try to reduce the amount of yeast to 2.5 tsp, it seems to me that the vertical shape of the cake (like yours) will allow it.

Do not forget to brag later, it would be great if you took a photo. I am personally very interested to see how this cake looks like in the shape of a cake.

OwlThanks again for the recipe! I bake almost every week, only the proportions are reduced by 2 times. What I didn't add to it - it always turns out super-tall and fluffy. The last time I reduced the dough, I threw the nuts and candied fruits like a big one, I thought that it wouldn't rise, it wouldn't even stir. He got mixed up, got up, baked. Especially delicious when served with poppy seeds, candied fruits and nuts + ground cardamom and ginger.

2 tsp yeast
530 gr flour
1 tsp salt
90 gr sugar
200 gr margarine / butter
2 eggs
150 ml milk
50 gr almonds
80-100 gr raisins / sushi cranberries, candied fruits, poppy seeds
1 tsp mixture of cardamom, ginger, ground

Pour boiling water over the almonds for 5-10 minutes, rinse with cold water, peel and dry in the microwave at full power for 2-3 minutes, stirring or in a frying pan, add whole or cut into large pieces with a knife.
I add different nuts: from peanuts to macadamia
Add poppy seeds, nuts and spices directly to the batch, candied fruits and raisins / cranberries in the dispenser.
The gingerbread man by the end of the batch should be quite soft like a cake.
For Panasonic Diet mode with raisins (RAIS) size XL.
