  • This is an easy to prepare and always successful snack that disappears from the table in an instant with a bang!
  • It is better to take small eggplants, because then they do not have a large number of grains. Tomatoes are also better to take small and not watery.
  • Cut the eggplants into thin slices and fry in a pan with a little olive oil.
  • Eggplant canapes or eggplant snack bars.
  • Place the fried eggplant on a paper towel to absorb the excess oil.

  • Cut the tomatoes into slices and also lightly fry in a pan. Just do not overdo it so that they do not start to lose shape.
  • Now we collect our canapes, alternating alternately circles of eggplant and tomatoes, not forgetting to coat them with pesto sauce. It turns out the following sequence: eggplant - tomato, eggplant - tomato - eggplant. Put a piece of mazzarella on top of the last eggplant, lightly coat with pesto sauce and sprinkle with chopped pistachios. We stick in skewers / sticks / forks for canapes and you're done!
