Festive shortbread cake

Ingredients

Shortbread dough:
Flour 400 g
Powdered sugar 140 g
Baking powder 1/3 tsp
Vanilla sugar 2 pack.
Zest of 1 lemon
Ground almonds or flour 130 g
Eggs 2 pcs.
Butter 250 g
Cream:
Vanilla pudding powder (cornstarch can be used) 1 pack.
Milk 200 ml
Powdered sugar 100 g
Butter 100 g
rum 1 tbsp. l.
Interlayer:
Jam 5-6 st. l.
Chocolate (not used) 70 g

Cooking method

  • Such a simple and festive cake was a huge happiness in my childhood! I want to share this happiness with you.
  • Dough:
  • Sift flour with baking powder and 140 g of icing sugar. Add vanilla sugar, zest, almonds, 2 eggs and 250g diced butter. Knead the dough and refrigerate for 2 hours.
  • Cream:
  • Cook the pudding from milk, powder and powdered sugar. Let it cool, stir in rum and butter.
  • Festive shortbread cake
  • Divide the dough into 4 parts, roll each into a layer. Cut out stars on one of them.
  • Bake the cakes on a baking sheet lined with baking paper for 15 minutes at 170 * C.

  • Trim the cakes, giving them the desired shape, chop the trim. Cover one cake with 2/3 of the cream, cover with another cake and spread it with half of the jam (I have red currants).
  • Place the third cake layer and spread the cream and chocolate (I have not used). Cover with a cake with stars, spread the top layer with jam, sprinkle with crumbs and ... put in the refrigerator for 2 days
