vegetable oil 2h l

Cooking method

  • Smoked turkey drumsticks stuffed with cheese and dried apricots (in Brand 6060 smokehouse)
  • Wash turkey legs, remove excess moisture with a paper towel. We chop off the extreme joint of the bone. With a sharp, long knife, carefully, separate the bone from the meat and take out the bone. We are looking for small bones, cut with a knife and take out. Some bones and cartilages are very difficult to remove, therefore, if it does not work out, we leave them, it will be much easier to remove them after cooking.
  • Cooking the marinade.
  • Pour a full multi-glass, dry white wine iiiiii and pour out We come to our senses after a successful surgical operation
  • Pour another multi-glass of wine, pour into a bowl, add honey and mix well until the honey is completely dissolved. Add oil, ginger, pepper, salt and mix. The marinade is ready, fill the shins with it, cover with a lid or plastic wrap and leave for several hours or overnight.
  • We take out the shins from the marinade, remove the excess moisture with a paper towel. We tie up the thin edge of the lower leg with threads and we get a bun.
  • My dried apricots, cut and mix with cheese (I have cheese "house in the village")
  • Divide the filling into two parts and stuff our prepared pouches. The edge can be chipped off with toothpicks, but I just sewed it up with a regular needle and thread.
  • Mix the mashed garlic with mustard and oil and rub the legs well.

  • We take out the Brand smokehouse, pour 3 whispers of wood chips (I have an apple, oak, alder) in a charcoal container, pour 100 ml of water into a bowl. Place the stuffed drumsticks on the grill and close the lid of the smokehouse. We set 10 minutes cold smoking and 35-40 hot smoking, turn on the start.
  • After the end of the program, we take the drumsticks out of the smokehouse and cool them, then wrap them in parchment and put them in the refrigerator for 2-3 hours.
  • After cooling, we take out the legs, cut off the thin tip of the leg and you need to find thin bones, veins, cartilages and remove. (I pulled it out with pliers). On the other side of the lower leg, cut and pull out the threads.
  • Everything is ready! Chop thinly and treat yourself!
  • Delicious

Ira, if I don't have cold smoking, will it work without it?

Thank you Vitalinochka
Of course it will work. I just need to sew it up better and not lay them down, but stick them up a little, well, so that the cheese doesn't leak out
Vitalinka
Thanks, I'll try!
