Truffle muffins

Ingredients

Wheat flour 150 g
Cocoa powder 2 tbsp. l.
Baking powder 1 tsp
Salt 1/3 tsp
Egg 1 PC
Sugar 100 g
Butter (margarine) 50 g
Strong coffee 50 ml
Cream 50 ml
Chocolate 100 g

Cooking method

  • We make strong coffee without sugar (instant coffee is possible), add cream.
  • Melt the butter and melt the chocolate in it.
  • Mix together flour, cocoa powder, baking powder and salt.
  • Beat the egg with sugar, chocolate butter and coffee with cream. Without stopping whisking, add the flour mixture.
  • Pour the dough into molds and bake for 20 minutes.

I hope Vitalinka will not be offended that I am answering here. Anka_DL, muffins or just chocolate sponge cake + butter - VERY CAPRIC. For example . the biscuit is almost never even ... (you need those Wilton strips) The presence of soda does its own + in your case, the cocoa may not fit. I prefer to give cocoa powder with a low fat content of 10-12% (usually about 22-25%) in this type of dough (chocolate + butter). Here the chocolate is natural - it is quite fat (cocoa butter) + the structure (namely proteins) does not like fat. And it doesn't work out well for me in silicone molds - why ... I didn't understand myself. Plus, try baking at a lower temperature - that's not how the top will rise.

But your muffins are gorgeous !!! So what if a volcano is not reflected in the taste, after all. And as far as I know, almost all cupcakes are cracked. If you really don't like the volcano, you can cover it with ganache or cream. And you will have beauty!
