Ingredients

Water 160 ml
Milk 80 ml
Wheat flour 1 grade 200 gr.
Whole grain wheat flour 100 g
Whole-ground rye flour 100 g
Salt 10 gr.
Sugar 12 gr.
Vegetable oil (corn) 15 gr.
Dry yeast 5 gr.

Cooking method

  • Knead the dough with the specified ingredients.
  • I did it in a bread maker (put the ingredients in the bread maker according to the instructions).
  • After kneading, I take out the dough and gently stretch it on a silicone mat into a rectangle, fold the rectangle in three. I shape the loaf. I put the dough from the vine with the seam upwards for proofing in a basket for proofing. I cover with a towel.
  • I give proofing for about 1 hour, until the workpiece is doubled.
  • Preheat the oven to 250 * C with the stone.
  • I turn the blank onto baking paper, make cuts and put it in the oven on a stone.
  • After 10 minutes, I decrease the temperature to 200 * C. After another 10 - up to 180 * C and bring it to readiness (until the temperature inside the bread is 96 * C).
  • In total, the bread is baked for 30-35 minutes.
  • Cool it on the wire rack.
